What is your favorite thing about fall? Least favorite?
What's on your agenda today?
Re: Tuesday Questions
What's on your menu this week? Yesterday we finished off eggplant parm. Today I'm making pot roast in the crock pot and later this week I'm planning to make jambalaya!
Do you have a favorite make-ahead and/or crock pot meal? I think my favorite crock pot meal is still Chicken Marrakesh. It's so so easy and so hearty and smells super yummy and it's pretty low on WW points too!
If you meal plan, why? To save money? Eat healthier? Etc. We do it for a variety of reasons. To not waste food in the fridge, to save on our grocery bill by incorporating the same ingredients for various meals, and especially to eat healthier. We also save money by planning out dinners and not going out to eat or finding ourselves ordering pizza.
To build on @audrewuh's question yesterday, what makes you feel like fall? Do you do anything to get yourself in...the mood?
I like to burn fall-scented candles, open the windows in my house...or I will if it ever cools down here. Also, Pumpkin Spice Latte's at Starbucks!!!
What is your favorite thing about fall? Least favorite? My most favorite is the cooler temperatures and wearing my jeans and boots. Least favorite is it getting dark earlier in the day.
What's on your agenda today? I'm WFH today so I got dinner going in the crock pot and now I'm working and doing laundry. I'm planning to have guests over for dinner on Sunday so I probably need to do some preliminary pick-up around the house. I don't know how it happens...I deep cleaned last weekend and I already feel like our house is a giant pig-sty. Ugh. I had planned on taking Cinders for an early walk but H woke me up in the middle of the night with his snoring so I ended up sleeping in instead. Maybe I'll get out around lunch time with her.
-Yup, every week for H. I wing it as I go for me but I'll meal plan for both of us when I'm back at work.
What's on your menu this week?
-H is getting veggie loaded egg white scrambles or cottage cheese with cut up fruit for breakfast, nut and cheese snack packs, chicken with roasted veggies and quinoa for lunches and chipotle chicken with brown rice for supper with lentils. I'm sticking with eggs for breakfast (breakfast tacos right now), not sure about lunch just yet but maybe a turkey sandwich and chicken salad with goat cheese for dinner. We are boring and ok eating the same thing most days during the week.
Do you have a favorite make-ahead and/or crock pot meal?
-Not really...I just make it up as I go along with the crock pot.
If you meal plan, why? To save money? Eat healthier? Etc.
-Save money and make sure we are getting the right amount of calories for each of us.
To build on @audrewuh's question yesterday, what makes you feel like fall? Do you do anything to get yourself in...the mood?
-Getting a pumpkin for the outdoors, watching the leaves change with lots of walks outside.
What is your favorite thing about fall? Least favorite?
-Changing leaves, cooler weather but not cold. Least favorite...knowing winter is coming.
What's on your agenda today?
-Chat with Ani some more, getting ready for our Houston trip...try to get a jog in and a shower. Priorities.
What's on your menu this week? Turkey wraps for lunch, grilled chicken/veggies/butternut squash/salad for dinner. We're getting back on the healthy-eating train.
Do you have a favorite make-ahead and/or crock pot meal? Yes, shredded crock pot chicken! Literally just a pkg of chicken and a jar of hatch green chili sauce. Cook in the crock pot on low 7-8 hours, then shred.
If you meal plan, why? To save money? Eat healthier? Etc. Both. Now that HEB has a new system where you can order online, we are saving even more money because we just order what we need and don't get distracted by other things (like when we actually go to the store).
To build on @audrewuh's question yesterday, what makes you feel like fall? Do you do anything to get yourself in...the mood? Fall candles and seasonal Starbucks drinks are my favorite. I can never really get in the mood though until we have our first chilly morning (usually in Nov.)
What is your favorite thing about fall? Least favorite? Favorite thing is that it isn't 100 degrees anymore, least favorite is having beach withdrawls.
What's on your agenda today?
What's on your menu this week? We have a Blue Apron box for M,T,W then we're off to Orlando! Lunch is leftover soup from Sunday night.
Do you have a favorite make-ahead and/or crock pot meal? I've shared this before but I LOVE my quinoa taco salad that I have for lunch almost every weekday - quinoa, black beans, black olives, shredded cheese, avocado and salsa. So easy to make ahead and throw it all together the day of. For a crockpot meal - salsa chicken. Throw it on top of a salad and you have a delicious dinner.
If you meal plan, why? To save money? Eat healthier? Etc. It's to eat healthier, but I think it's ended up saving us money sometimes. When we plan out meals, we don't rely on ordering in or going out to eat, which is when we spend the most $$ and tend to order things not so healthy. So it's a win-win for us.
To build on @audrewuh's question yesterday, what makes you feel like fall? Do you do anything to get yourself in...the mood? Well H and I do lots of things to get in the mood
What is your favorite thing about fall? Least favorite? I LOVE the temperatures and the crisp air, and getting to wear sweaters and comfy clothes. I love being able to put the down comforter on our bed and snuggling into it on weekends with H and the cats. I don't love the fact that it's so dark in the morning when I wake up - it makes it hard to get out of bed.
What's on your agenda today? werk werk werk werk werk.
Bahahahah! I knew someone would go for it!
@minskat30 I hope you get to get out for a jog today!!!
Do you meal plan? Almost never, although this week I did on Sunday and it is making lunch/dinner prep much less stressful and time consuming
What's on your menu this week? I plan on making chicken caesar salad and Bibimbap for dinner this week. I haven't gotten much further than that, yet, but I already know that Wednesday and Friday we have plans to go out.
Do you have a favorite make-ahead and/or crock pot meal? We usually make my H's famous ragu' (Bolognese) sauce by the kilo. We then portion it up in tupperware are freeze it. We make tupperware portions for 1, 2 and 4 people so we always have a nice amount on hand. It makes making a fresh pasta dish so effortless.
If you meal plan, why? To save money? Eat healthier? Etc. We don't usually meal plan, except for this week randomly! More than to save money, I feel like it made getting lunch and dinner prep almost effortless, which is greatly appreciated.
To build on @audrewuh's question yesterday, what makes you feel like fall? Do you do anything to get yourself in...the mood? When the leaves start turning! Unfortunately, it is still around 90 degrees here, and September is still tourist high season for the beaches, so although we are in mid-September it feels very summery. I don't really get the cool breeze, autumn feel until November, unfortunately. I am an autumn baby and it is probably my favorite holiday!
What is your favorite thing about fall? Least favorite? Cool air, wearing jeans, high-caloric warm dishes that I feel too guilty to eat during the summer!
What's on your agenda today? Work and then I have to run to the dentist. I wear invisalign and one of my buttons popped offend I need to get it reattached. Nothing too exciting.
I have never liked fall because it meant winter was coming but each year I like the summer heat less and get more excited for fall. We've been takimg the stroller for a walk every night and hope we can do so the next couple of months before winter.
We did end up trading the truck in last night. Got a two year old Civic with 25k miles and cut our payment by $300 a month so I'm really stoked and grateful that H would give up something he loves to better the family.
@jenna8984 I'm glad you and your H are finding ways to combat the stress daycare is going to put on your income. Hopefully you can pay off the Corolla quickly and have that car payment money back in your account!
"Overnight Cinnamon Rolls"
What's on your menu this week? I made some kickass baked mac-n-cheese last night with roasted garlic parmesan broccoli & cauliflower as a side. I ate all of the veggies but I have enough mac to last me the rest of the week.
Do you have a favorite make-ahead and/or crock pot meal? Pulled pork! I think that's the only thing I make in my crock pot other than dips.
If you meal plan, why? To save money? Eat healthier? Etc. N/A.
What makes you feel like fall? Do you do anything to get yourself in...the mood? Seeing Halloween stuff usually kickstarts it, and then when we start getting cooler evenings. That weather change is what makes it for me! Also noticing the leaves changing color or dropping to the ground... and that sound that the leaves make when they're starting to get crispy and the wind blows. I love fall.
What is your favorite thing about fall? Least favorite? Faves: The weather being slightly cooler but not cold, Halloween & fall decorations, the smell in the air. Least faves: Pumpkin spice food EVERYWHERE. For some reason it makes me feel physically ill. I like the smell but can't handle the taste. I also hate when it goes from nice fall weather to LOL IT IS EFFIN COLD NOW, ENJOY HAVING NUMB DIGITS.
What's on your agenda today? A bunch of nothing. My past couple weeks of work have been hell but most the crazy is off my desk (for now), so I'm doing as little as possible today!
What's on your menu this week? Tonight, mac n cheese. Tomorrow, spaghetti. Other than that, it's whatever Blue Apron sends me.
Do you have a favorite make-ahead and/or crock pot meal? Slow cooker chicken parmesan. The meat ends up so moist!
If you meal plan, why? To save money? Eat healthier? Etc. When I did it, it was to save money that I'd spend going out to lunch and dinner all the time.
To build on @audrewuh's question yesterday, what makes you feel like fall? Do you do anything to get yourself in...the mood? Ummm...... Dancing naked under the moon? It gets a bit nippley out, though.
What's on your agenda today? Right now I'm watching a presentation that someone in my company is giving. After work I'm going to happy hour with my friend. Followed by doing whatever the hell I want.
@loro929 – Ooooo, I want to try your ragu, haha!! I have this super intense gravy/Italian tomato sauce recipe that I’ve only dared to make once since it was an all day deal. I never even thought about freezing some of it! It might actually seem worth it again, instead of only using some and the rest going bad before I can get to it.
@jenna8984 – I had no idea cauliflower alfredo was even a thing! I’m sorry you’re still not able to eat dairy!
@AlPacina You should give it another whirl! Freezing in portioned size tupperware makes all the difference. We usually do 1, 2 and 4, so in case one of us is alone and wants to whip it up we don't have to waste an entire large supper for a smaller portion. If we have people over and plan to use it, we have the 4-portioned to make it go a little quicker. In regards to the effort, I agree, I used to dread ragu day, because it was literally a whole day affair with us taking turns for hours stirring the sauce so it didn't stick to the bottom. We fairly recently discovered that the crockpot makes the same exact ragu minus the hours of labor... and it has changed our lives. All we do is pre-cook the meat, we use ground beef and pork, so we prepare that as usual in a frying pan. Then we add all of the other ingredients, carrots, celery, tomato sauce, wine, laurel, salt, pepper, extra virgin olive oil and cloves to the cooked meat in the crock pot, and let that baby do its job. We will prepare it on a Saturday night for instance, either before going out or going to bed, and leave it on low until lunchtime on Sunday. The last hour before eating we uncover it and crank it up to high to evaporate any extra juice. AMAZING and only takes the 25-30 minutes of prep-work.
@labro I agree, my favorite part of fall is getting to wear all of my boots! I feel like outfits are so much easier to put together with boots.
@minskat30 I hope you have such a great time on your trip! Ani chats are everything too.
@beachyone15 I am having beach withdrawals too! I just took the beach pass permit sticker off of my windshield
@PamBeesly524 that quinoa taco salad sounds so good! I hope you have a great trip to Orlando!
@loro929 Mmmm bibimbap! There's a great Korean place by me...I think I have a craving now.
@jenna8984 A+ for your H. That definitely sounds like a win for your family!
@wink0erin The Halloween decorations are everywhere already! I always love looking at the kids costumes, they get cuter every year.
Now onto the questions:
Do you meal plan?
Yes, but I also have a couple nights that are "mystery meals". That turns into leftovers, cereal night or take out.
What's on your menu this week?
So far I have Gyros with rice pilaf, homemade pizza, tomato basil pasta with pancetta and grilled chicken caesar salads.
Do you have a favorite make-ahead and/or crock pot meal?
My go to for the crock pot is either beef stew or pulled pork. I hardly ever use the crock pot because we always have leftovers that my H will not eat.
If you meal plan, why? To save money? Eat healthier? Etc.
All of the above. It's just easier and saves so much time after school- my precious time! We used to do BA, but we ended up having so much of our normal groceries go to waste. We are taking a break from BA and just getting better at creating our own meal ideas.
To build on @audrewuh's question yesterday, what makes you feel like fall? Do you do anything to get yourself in...the mood?
I always love a good PSL! But honestly fall just translates to going back to school for me. Once works starts it's officially fall in my world.
What is your favorite thing about fall? Least favorite?
Wearing cute boots and sweaters is my favorite! My least favorite part of fall is getting back into the routine of work- oh and I always get a sinus infection from the change in temps and kid germs.
What's on your agenda today?
I voted this morning and later I NEED to get my nails done. They need love. I also need to pack more lunches and review some paperwork for school. I wish I had a more exciting day off from work. But I am so glad I made it here to NEY...hoping I am not the last post of this thread...
@loro929 - You probably just made my life so much better. I'll have to try it in a crock pot! I need to learn to stray from recipes a little easier.
@labro - I totally see where you're coming from. I feel like part of it is also not really having the containers/fridge part figured out. Like, maybe I'd be more willing to make HUGE amounts of food if I had a designated fridge space and more uniform containers. It sounds so touchy, but it really limits me. How long are you willing to refrigerate meals with meat?
@AlPacina Maybe a week and a halfish? I guess it depends on the dish itself and the components. We've definitely had veggie tofu stir fry that hung around for almost 2 weeks one time and it was ok, but stuff normally doesn't last that long in our house either.
What's on your menu this week? Food. Tonight is leftovers (there's tilapia, spinach, mashed potatoes, pesto chicken and eggplant). No idea for the rest of the week.
Do you have a favorite make-ahead and/or crock pot meal? Sometimes I'll make baked ziti into little pans and then just heat up when I'm looking for something to eat.
If you meal plan, why? To save money? Eat healthier? Etc. N/A
To build on @audrewuh's question yesterday, what makes you feel like fall? Do you do anything to get yourself in...the mood? When I no longer can wear my flip flops, and when the leaves start changing. I love the colors of fall, but honestly I try to stay in summer as long as possible... for instance I'm taking off work tomorrow to have a beach day with my mom, sisters, and niece.
What is your favorite thing about fall? Least favorite? The colors, apple cider anything, and my birthday. Fall means snow is coming, yuck.
What's on your agenda today? Just got in the office from my big offsite event that I run. About to do some new employee onboarding. After work the plan is sleep since I had to be up at 4:30 this morning. Tomorrow I'm having a girl's day with my family.
What's on your menu this week? See above - veggie lasagna and pork stew.
Do you have a favorite make-ahead and/or crock pot meal? Three bean turkey chili. I don't really use a recipe, I just throw things into the pot.
If you meal plan, why? To save money? Eat healthier? Etc. Both - it cuts down on food waste, since I try to use whatever's on-hand and build a menu around that, plus if I can cut down on the number of times I go to the grocery store, I am less likely to buy other random crap. Plus it saves time. H works graveyard shift right now, so a lot of housework falls on me. I would rather not have to do a lot of stuff after work, besides walking the dog and cleaning the kitchen, which seems to always be messy.
To build on @audrewuh's question yesterday, what makes you feel like fall? Do you do anything to get yourself in...the mood? As soon as the weather turns, I start to make soup and stuff in the crock pot. THAT makes it feel like fall to me. The smell of smoke when people start using their fireplaces. Being able to wear boots and sweaters.
What is your favorite thing about fall? Least favorite? Favorite: The crisp air, being able to make soup without the house getting way too hot, football! Least favorite: It starts getting dark super early in the PNW.
What's on your agenda today? I'm at work, so... Yeah. But tonight? Walking the dog, and watching trashy TV since H is at work.
@labro I will definitely have to try that Chicken Marrakesh recipe, looks awesome! And cinnamon rolls. I love cinnamon rolls. Oh! And fall makes me want Monkey Bread too, because it's the shit.
@AlPacina my H usually eats two portions of things too. Which is why I started making, like, 8 portions of everything, so that he can eat two and we will still have leftovers for a couple of days' lunches and maybe dinner. Learned that lesson with meal planning early. H is 6'4" and 240lbs, eats quite a bit.
Do you have a deep freezer? I think H and I really need to invest in one. His parents gave us a deep freezer for our wedding...and it crapped out on us while we were on vacation and we'd only been using it for less than a month. We never replaced it and I really feel like we just need to suck it up and do it. We'd save so much more with more freezer space and the ability to just pull what we need from there rather than run to the store for everything.
@speakeasy14 Poor you! Hopefully some extra sleep and the day off help you feel more like yourself again!
H's family hunts, and he has gone with them before, but he isn't really a "hunter", per se. He plans to hunt this year for reals though, so I think we will need a deep freezer (assuming he actually shoots anything ).
@madamerwin - Is it weird that I'm scared if I make more food my BF will just start eating EVEN MORE?!? Haha. I'm so glad I'm not alone in this.
BTW, your garden sounds amazing! We moved to a new house in Vancouver this year and the bugs ate just about everything, which we weren't used to. New plan for next year. OF COURSE the only things growing are my BF's hops.
@AlPacina the bugs!! We live in SE Portland and I swear, the I have never seen worse whitefly anywhere. They, along with the aphids, devour our kale if we are not super-vigilant (which we're not). Somehow our squash and pumpkins remained relatively unscathed until the past few weeks, which is fine since they were basically done producing anyway. The beets, peppers, potatoes, onions, and tomatoes always do super well though, and somehow our strawberries weren't attacked by bugs this year either. Oh, and since it's legal, H is growing two cannabis plants, and they are doing VERY well. Probably because he babies the shit out of them. I am pretty sure cannabis and hops are related, so not surprised your BF's hops are doing well. They're hardy plants.
And maybe your BF will eat more food if you make more, but there has to be a point where he can't eat any more - once you find that point you'll know how much you have to make to have leftovers
