crockpot Thanksgiving sides

So I know I can google "crockpot thanksgiving sides" or something like that, but does anyone have any awesome must haves for Thursday they recommend? We're not going to be home the majority of the day, and doing the dinner thing after 5. So I'd love to be able to crock some stuff and have it mostly ready by then. I have three crock pots, but I actually found a recipe for slowcooker turkey that we're trying too.

I'm making glazed carrots in the crockpot Thursday. I haven't tried them before, but they should be good.

Serves: 8

2 pounds baby carrots
2 tablespoons butter, melted
1/2 cup firmly packed brown sugar
1 1/2 teaspoons McCormick® Cinnamon, Ground
1/2 teaspoon McCormick® Ginger, Ground
1/2 teaspoon salt

Directions

5 minsPrep time4 hrsCook time

Spray inside of 4-quart slow cooker with no stick cooking spray. Add carrots and melted butter; toss to coat. Cover.
Cook on HIGH 3 to 4 hours or until tender.
Meanwhile, mix brown sugar, cinnamon, ginger and salt in small bowl until well blended. Toss cooked carrots with brown sugar mixture in slow cooker just before serving.

I also have some friends that swear by crock pot stuffing.

6cups cornbread, . (cooked, The box cornbread mixes such as jiffy will make this sweeter)
8slices day old bread
4eggs
1medium onion, chopped
1⁄2cup celery, chopped
1 1⁄2tablespoons sage or 1 1⁄2tablespoons poultry seasoning
1⁄2teaspoon black pepper
2(10 1/2 ounce) cans cream of chicken soup
2(10 1/2 ounce) cans chicken broth or 2 (10 1/2 ounce) cans turkey broth
1⁄4cup butter
salt

DIRECTIONS

Lay your bread out on the counter the night before you prepare the dressing so that it will dry.
Crumble the breads.
Add all other ingredients except butter. Salt to taste.
Pour into a sprayed crock pot.
Dot with butter.
Cover and cook on high for 2 hours or on low for 4 hours.

Well, if one of your crockpots is still spare and crack-less, you could keep your mashed potatoes warm in one. I make 'em like normal and slap 'em in a crockpot and they'll stay good all day.

@DrillSergeantCat, my Grandma used to make crockpot stuffing! Not with cornbread though.

Last year I made a pretty tasty bread pudding in the crockpot.

A pumpkin, sweet potato, or butternut squash soup would be a natural.
