So, my mom's birthday is tomorrow, but we're getting together today to celebrate and I'm always in charge of the cake. I love to bake (usually) but can't do it that often with my crazy sweet tooth. I also love to experiment with flavors so I went with two of her favorites today, grapefruit and ginger. The cake is a white caked spiced with ground ginger and filled with a ginger grapefruit curd. I made swiss meringue buttercream for the first time, I'm not really a fan, it's WAYYYY too buttery for me.

All boxed up and ready to go! Now here's hoping for a successful 20-minute car ride to her house with a crazy 2 year old mutt running around the car!
