NWR - Summertime desserts

FI and I have a dinner date with another couple tomorrow night and we've been tasked with bringing wine (easy) and dessert (not so easy). Anyone have any easy summertime dessert recipes they'd like to share? Preferably any without a lot of processed ingredients - FI has a corn allergy and while it's nearly impossible to avoid all together, I like to make the best effort possible.

  • STRAWBERRY SHORTCAKE! I usually use the bisquik shortcake, which isn't unprocessed by any means, but shortcake doesn't HAVE to be all. processed.

  • @chibiyui I was tossing around the idea of strawberry shortcake! Easy and tasty, particularly for hot summer days (and tomorrow's high is supposed to be near 90)
  • A fruit tart 
    Strawberry shortcake 
    Homemade ice cream sandwiches 
    Blueberry crumble 
    No-bake cheesecake w/ fruit 
    Fruit Trifle 
  • Key lime pie! 

    3 egg yolks, 2 14oz cans of sweetened condensed milk, and the contents of 1 whole lime-shaped squeezy bottle of lime juice. Mix together, and put it in a pre-made graham cracker (or oreo!!!) crust. Bake for 20 minutes at 300, let cool, and freeze overnight.

    I actually have a fuckton of strawberries in the fridge.

  • My fave is trifle with lemon curd, angel food cake and fresh berries. Like this, but with store bought lemon curd because ain't nobody got time for tempering egg yolks.

  • I have a non-strawberry shortcake dessert that my family calls strawberry shortcake. It may be too processed for you, though.

    It has angel food cake (from a grocery bakery), frozen strawberries, strawberry jello, vanilla instant jello pudding, milk, and cool whip. It is served cold and is light and refreshing.

  • Strawberry Pizza (can be made with other fruit). Short bread crust Topping: 8 oz light cool whip, 8 oz cream cheese, 1/2 cup powdered sugar, whip together until smooth. Spread topping on top of the short bread crust (after it is fully cool), then spread a mixture of cut up strawberries and strawberry glaze on top of the cool whip mixture and chill before serving. Can be served in a pizza pan or a rectangular pan. I find the rectangular pan easier to cut pretty.

    @beethery FI will be so happy that you posted that key lime pie recipe. It's his fav and he keeps asking me to make it for him.

  • @cupcait927 try it with the oreo crust and put some double stufs in the bottom of the crust before you pour the filling in. Shit's AMAAAAAAZING.

  • If you have a little time, pavlova looks incredibly impressive but is freakin easy. 

    Whip up some egg whites til firm then sweeten that shit. 
    Bake the living hell out of it.
    Put on some MFing whipped cream and berries and chow down.

    Best part? Not heavy at all, so you don't accidentally nap at the table.

  • This is not one I'd bring somewhere but just to have around your house: cool whip & graham cracker sandwiches kept in the freezer are amazing!

  • Kahluah Cake!  Mr. Christie chocolate chip cookies, whipped cream (the kind you whip yourself - add sugar) and kahluah.  Lawyer of whipped cream, layer of cookies, sprinkle some kahluah on the cookies and repeat. Put it in the fridge (should set over night) and you're good to go.

    My BFF makes those all the time! She'll also makes ones with chocolate frosting as well.
  • If there is a grill available, I LOVE to grill peaches then drizzle them with honey while they are still hot and put a scoop of frozen yogurt/ice cream on them. Add a sprig of mint and you are good to go!

    My favorite desert is no-bake cookies. :) Easy to make and you can make them with or without peanut butter, but I don't know if it fills all of your requirements.

    Those sound fantastic! I'll have to file those recipes away, since we both love peanut butter and chocolate and FI can eat everything in the ingredients.

    I have made this several times and there is no such thing as leftovers.

    The peanut butter ones are the best! The trick is the amount of time to boil them, which determines how they harden. If you get them too dry they crumble and if they don't boil enough then they don't set. If they don't set, don't panic, just freeze them. Still delicious :) 

    Also there is a recipe that involve coconut that is delish.  I sometimes use a different recipe with crunchy peanut butter which are amazing too.  Clearly I make too many cookies. :)

    My favorite summer dessert is yogurt pie. I mix one big cartoon of strawberry yogurt with one slightly melted carton of cool whip. I put in premade pie crust and freeze. If I am feeling fancy, I will mix in some strawberries before freezing.

  • DH calls it Ice Box Cake graham crackers, chocolate pudding, cool whip. in a pan put down a layer of graham crackers then a layer of pudding then repeat the process a few times ending with the pudding. Serve with Cool Whip.






    What differentiates an average host and a great host is anticipating unexpressed needs and wants of their guests.  Just because the want/need is not expressed, doesn't mean it wouldn't be appreciated. 
  • Summer Berry Pudding - A little messy to serve but absolutely delicious and easy to assemble.  You can also use the berry sauce to accompany vanilla ice cream, shortcake, or pound cake.  This recipe makes my H very happy.  :-)
