Deer my dears

DH got his first deer last night!!  It's at the butcher currently.  Anyone have any good venison recipes for me to try?

  • We basically sub venison for anything at my house lol Deer spaghetti, deer sloppy joes, deer sausage (my dad makes amazing summer sausage homemade). I guess one recipe I use is to take deer meat that's been cut like cube steak, cut it into bite-size pieces, brown it in a skillet, then put it in a casserole dish and cover it with cream of mushroom soup. Bake at 350 for about 30ish minutes.

  • We also sub deer for beef.  DH has a leg roast recipe we've been dying to try... just has to get a deer first!  I know it's off the show Meat Eater... they've got lots of good game recipes if you look it up!

    I've done this too and it is so good. I add lots of thinly sliced red onions and do mine in the crockpot, though. Then I make some rice and poor some over it. OMG!

     

    When I don't have venison, I use regular beef for this.

  • We regularly sub venison for beef as well. 

    I suggest buying the kind of meat tenderizer with the little spikes, if you don't have one already. Makes the tougher cuts so much better.

  • Like PP's said, we sub venison for beef a lot. We really like the "sweet meat" as steaks and deer burgers. I would reccommened to have the butcher make some summer sausage. That stuff is so good. FI and I "butcher" the deer ourselves and use my meat grinder so it is rare we get summer sausage.

    Well that depends on the cut!

    Ground venison, just sub in spaghetti, sloppy Joes, whatever.

    For loin, I marinate overnight then throw on the grill. Trying and failing to find the last marinade recipe I used... I know it had olive oil, soy sauce, worcestershire sauce, rice vinegar, garlic... maybe lemon juice? IDK. It was really good

    For roasts, I cook in the crock pot. I like it with balsamic vinegar, brown sugar, orange juice, and red pepper flakes.

    It is smoked sausage. Kind of like you by from Hickory farms and tastes similar to beef jerky without being tough.

  • I don't cook much venison but I love grilling elk with just salt and pepper. I suppose it's pretty close to the same thing.

    Fun fact - while people are generally referring to deer meat when they say "venison," the term technically refers to the meat of any antlered animal. So you do cook venison! :)

  • If it's ground we use it for tacos and Shepard's pie regularly and spaghetti sauce on occasion.  The roast we do in the slow cooker or flaverwave different rub almost every time but the best was FI melted some butter added a bunch of spices and infused it right into the middle of the roast then he puts beer in with the roast every time almost always comes out perfect.   I did a stew with the neck bone once I just cooked it on the bone in the crock pot with all the veggies and some beef broth/beer/spices then when it was cooked I peeled it all off the bone in chunks.
