  • @eilis1228 - I have 3 or 4 dutch ovens.  My cast iron is my favorite, I use it ALL THE TIME.
  • @lilacck28 - I don't have any good advice for dealing with being too stressed/anxious but I have lots of empathy! I've been feeling the same way. I feel so uncertain about the future right now and it's stressing me out!


  • @eilis1228 we registered for a fancy (5 qt?) Staub dutch oven. My mom has a smaller Staub, and FI"s mom has a larger le creuset. They both love them. I had a hard time picking between the two brands, but I ended up going with Staub because of the ltitle dimples in the lid of the pot... and I thought it was prettier. haha. 

    I'm not a big fan of most of what you use it for (pot roast, etc) but FI LOVES that food. I think he'd really love to get the Staub. We already have a $20 dutch oven from TJ Max, and FI loves it. If no one buys the Staub for us, I've read that Lodge makes a great dutch oven for something like $50 or $60, so we might eventually get that.

  • One of my dutch ovens is a Lodge.  It's actually my favorite.  I have 2 other cast iron Lodge products too.  Just make sure to get the handle covers because it gets HOT.  And I'd recommend a cleaning brush, too.  I use kosher salt but I need to buy a brush.

    I woke up at 10:30 today... which is weird for me. I don't usually sleep past 8:30 so I'm chalking it up to daylight savings and the fact that I'm not working today.

    I'm a little bit frustrated today aside from the waking up late thing. I mentioned in my thread from yesterday that BF and I live separately for now until he graduates nursing school and gets a full time job. Well, most of the time I'm neutral about it, I like my independence and he likes his and we have really crazy schedules anyway so we schedule time to make it easy to see each other during the week. So it REALLY REALLY SUCKS when the weather prevents him from being able to drive to see me, which happened twice last week. It also REALLY REALLY SUCKS when that same weather cancels his classes and he has to make them up on the days we usually reserve for each other, which is happening today. I go to school online so I don't have that problem, and it is hard for me to be understanding about it and not be annoyed at him, but I am sooo tired of this. It's been a long winter.

    As for my plans for the day, I'm gonna finish cleaning my room that I started yesterday. I bought some much-needed things to help keep my clothes organized and stuff, which is my biggest problem right now. I blink and my stuff is just everywhere! So I got some hanging shelves for my closet, and I'm gonna go through and put together another round of donations and reorganize so I don't go crazy every day. I also have to get rid of a chair and hopefully the shelves plus the getting rid of stuff will remove my need for a dresser or at least give me the opportunity to repurpose it. Yay for spring cleaning!!!
    I'm also gonna go full-speed ahead on my car hunt. Most of the mechanic shops around here have used ones for sale, and I have a friend who has his own shop in town who told me to bring anything I find to him so he can tell me if it's worth buying and how much to offer. So hopefully I can do all of that today.

    Re: Dutch ovens. We have two! We have an 8 qt. enameled cast iron Martha Stewart dutch oven that I use for roasts and soups and all sorts of stuff and we have a 5 qt. Lodge non-enameled cast iron dutch oven. We haven't used the smaller one yet but H really wanted it for camping and making stuff with it on the grill.

    Nothing exciting here. We were supposed to start on sod work today but it's raining and the rain is supposed to continue for most of the week so the company called me and we made a decision to reschedule for next week when the weather is dryer. They could do the work in the rain but it would be super messy and we aren't exactly on a tight schedule so I didn't see a problem with waiting. I took Cinders to the vet this morning for some annual shots and to talk about her on-going allergy issues. The vet recommended giving her new food a few months at least to take effect (apparently 2 or 3 weeks isn't long enough for them to get it out of their system, oops). So I guess we'll see what happens. I'm so tired of the dog licking her feet all the time if we aren't watching her.

    @eilis1228 - I have a Food Network Dutch oven, and I LOVE it. I use it for pot roast, soups, and the most amazing chili mac EVER. 

    I really don't have a ton of updates. I did some WR things this weekend - did some trial seating charts (I'd show, but they all have names & stuff on them, so, sorry!) and I was really happy with how they came out. So now it's just a matter of solidifying the seating and getting those done. 

    This week I have a couple games, nothing too exciting. But I am counting down to my shower & bachelorette!! WEEE!!

  • LOL Totally registering for a dutch oven after all of this feedback! Thanks, everyone! I think we may go with Lodge for cast iron stuff. They're affordable and well made, and Amazon sells them. I told FI he could set up an Amazon registry for tools, and we may include a few kitchen gadgets like Lodge products that aren't sold at brick and mortar stores. I'm still figuring it all out though. 

    Oh! I also just figured out that some silk flowers I ordered are being delivered tomorrow. They were on sale, so I got a few different kinds to look at quality and play around with bouquet options. If I like them, I'll keep an eye out for more sales... I'm going with silk flowers for the wedding since my mom is HIGHLY allergic to real flowers and will have an asthma attack if she's near them. I'm looking forward to playing around with them tomorrow night.

    CocoBellaF I haven't even considered other colors.  We haven't made a final decision on a vanity, I'm probably safer with white anyway. 

    Dignity100 Glad you were able to get the building's security to help.  I have no idea what I would do if I were stuck in an elevator and no one was answering.

    southernpeach89 I'm glad you said something, even if she doesn't understand what she did wrong, at least it is known that it wasn't ok. 

    eilis1228 I guess I'm in the minority about dutch ovens. I have one, but I'm not crazy about it.  They're really heavy and awkward to store.  That being said, mine never leaves my stovetop and I use it for stews, soups, sauces, or chili. 

    500days Your Fi's cousin sounds like my bf's cousin; maybe they're related.  His cousin did the same thing.  They had his car for over 2 months and once he got it back, it still had problems.

    @speakeasy14 I could potentially sub for anything k-12, but I'll be able to choose. 
  • lilacck28 Go in with an open mind then.  For younger kids, it is easy to prep extra stuff for them to do, but once you start getting into the middle school territory I think it gets more difficult to prepare.

  • @speakeasy14 Hahaha! I cannot believe that they are so similar. I feel really bad for FI, because he was truly trying to help his cousin get some extra business. My FI is the type that expects work to be done even faster and better for family. When FI does hardwood flooring for family members he makes sure to make it absolutely perfect. Only the best. His cousin has made FI miss jobs that he could have taken if he had 2 vehicles available (he uses a box truck too). We've lost income from this and his cousin just doesn't even care. It's so frustrating to hear that FI wants his cousin out of his life. I think FI holds extremely high expectations of other people.

    @southernpeach89 I'm sorry that your friend seems to not understand that what she did was wrong. Weddings truly bring out the worst in some people, and I hope she comes to her senses. 

    @eilis1228 definitely register for a dutch oven! There are tons of recipes you can use for it, and you can take a cast iron one camping too (if you want). Plus, you can make an awesome chocolate lava cake in one, either in an oven or over a campfire! 

    There isn't much going on here today. FI and I got our tax returns back from our CPA last night, and originally I owed money when he took the standard deduction, but when he redid mine yesterday and itemized, it turns out I am getting a small refund after all. And FI's witholdings are all messed up, so he is getting a large refund back. We will have to fix those for him, but it was a nice surprise. We should be responsible adults and put it all into our savings, but FI has been drooling over a new watch and we are tempted to go and buy it for him as an engagement watch. I think it will go into our savings for now, but maybe over the summer we will go get him that watch once we have a little more in our savings and after we move into a new apartment. 

    We both had to work late last night, and were really bad with our diet and stopped at In N Out for dinner on our way home. It was delicious, and it made me really want an In N Out food truck at our wedding later in the night for our guests, but they don't have In N Out in NY :(. We will just have to slowly corrupt our friends when they come out to visit us >:)

    Then we went home and watched Once Upon a Time (we missed it on Sunday). Semi-spoiler: I was crying at the end. Did anyone else see it?

  • lilacck28 I have not, but I have a bunch of friends that teach middle & high school kids.  At that age, kids consider a substitute to be a fun day so it is hard to have any kind of lesson plan. I tutored elementary aged kids.  With those kids, I didn't work on what they were learning in school, but it was my own lesson to help them with math and/or reading. I had workbooks in math and reading and would also get different activities from educational sites (a lot of word searches, crossword puzzles, and word games). I tried to make learning as fun as possible.

  • @eilis1228 I learned how to make that at the camp that I worked at (where my camp nick name was Aurora! We weren't allowed to use our real names, so I used that as part of my internet moniker). Anyways, we would just make chocolate cake mix, add half of it to the dutch oven, bake it over the fire for a few minutes, take it out, layer a ton of Hershey bars on top, and add the rest of the cake mix and finish baking it. The Hershey bars would melt and then it would ooze out like lava when you cut into it. I have made it in the oven too.

  • @AuroraRose41 - I watched Revenge last night - have to watch Once Upon a Time still.  Also caught up on Walking Dead - man I watch too much TV!

  • @Dignity100 I know the feeling about watching too much TV! FI and I haven't gotten into Revenge or The Walking Dead, but lately we really have enjoyed Agent Carter and Gotham. Our other favorites are all on a break right now, but once those start up again we will be watching a lot of TV too! Those are Grimm, Reign, and The Flash.
