Dutch Oven Recipes

I received an enameled dutch oven as one of our wedding gifts and am really excited about it. I want to cook some really cool stuff in it, so does anybody have good dutch oven recipes?

Last night I made a Turkey Chili Mac recipe that is very tasty, but I probably could have managed the recipe without a dutch oven, it just used the stovetop. So I'm especially looking for anything that goes stove to oven so I can have fun with the unique things a dutch oven can do.

Also, dutch oven jokes get made every time we talk about it. And it makes me think of how The Soup used to regularly make fun of a dutch oven cooking show. Fun times in the kitchen.

What kind did you get? I have a Le Creuset obsession

 

My favourite recipes to make are the classics. Coq au vin, osso bucco, short ribs. You brown them in the pot, add everything else and throw in the oven. We also make gumbo in ours but leave it on the stovetop, but it holds the heat better when serving at the table.

My absolute favorite thing to do is make French onion soup the America's Test Kitchen way where you caramelize your onions in the oven. I made it the very day I bought my dutch oven.

This is the one I got.  Crockpot brand that probably came from Bed Bath Beyond.  

I was actually quite impressed with how it held the heat. I'll have to do something where I can serve from it for Thanksgiving (which I think we might be hosting this year).

I have a few pieces of Le Creuset that I'm obsessed with. Unfortunately, most of what I make in them is cold weather food. @teddygrl's recommendations are on my list and the ATK onion soup is amazing.

I spend the winter making soups, chili, braises, etc. in mine.

Ohhhh cassoulet for sure. But again, cold weather food (although it totally is winter this week for us in CA!).
