Anyone around? How was your weekend?

Did you all have good weekends?

H is driving people to MEPS today so I'm home with the pups. I just kicked today's ass. I grocery shopped, walked the dogs, made 5 dinners for the week, cleaned up, worked out, did laundry, and now I'm going to update the blog. I'm also going to finish Bossypants today.

First- if you're around- can you give me some ideas for healthy in between meal snacks? I usually eat fruit and hummus but I feel bored lately.

    Way to conquer the day Hike! For a healthy snack, how about some kettle corn? The family I nanny for gets ones that are only 100 calories per bag. All I've really done today is do my dishes, bake a batch of brownies from scratch, and a batch of caramel from scratch. Waiting for the caramel to solidify a little more so I can cut it into pieces and individually wrap in wax paper (like taffy). In the meantime, I'm watching one of the other wives' little girls (4 and 1) so she can run some errands and just have a little "free" time. Got awesome news that my FI will be coming home much earlier from his det. than originally planned, so that's sweet!

    Hmm, ran errands (oil change, grocery shopping) and now I'm just watching football on the couch and doing a crossword puzzle.

    Hike, are you loving Bossypants?? I read it in like three days, couldn't put it down. 

    Binx, that's great news on your FI coming home earlier!

    Wow Hike I am totally impressed.  I am home from the bachelorette weekend and I can say that I am not 21 years old anymore and my body feels it.  So basically I am laying on the couch wathcing Lifetime Halloween movies.  HAA

    mmm Binx, I pop my own popcorn (the plain, boring kind ;) ) and put pepper on it, then split it up in separate baggies so I don't overeat it! So good. Hike this is an AWESOME in between snack because the pepper makes the popcorn so flavorful that you don't miss all the butter and cheese. And since you go with the plain kind, you don't have to feel guilty if you need more than just the baggy hehe

    I have to admit I have become a sucker for the whole "kale chips" although they are easy to burn! I'm also a big sucker for apples/cucumbers/celery and Almond butter (I don't do Peanut often).
    I know people swear by cottage cheese... I'm not a fan so I just can't jump on that wagon, but I do love those 100 calorie packs of nuts you can buy.. They come unsalted and it's sooo easy to overeat nuts since they are "good for you". They are, but at some point, fat is still fat, and you can't have crazy amounts of it.

    I'm probably not super useless because lately I have gone really simple... raw veggies and such. My new kick is a banana right after the gym or for breakfast. I hate bananas, but they are filling and filled with great stuff for you.
    If you're needing something a little heavier as a snack, go pick up some whole wheat pretzels and use a spicy mustard to dip them in. It'll control your palette so you won't want to eat anything else (which is good if you're a sweets craver) and it'll fill you up in a not-so-bad-for-you way.

    My weekend has been good, but really busy and now it's already noon on Sunday. boo. Seahawks are playing a rough rough game... It's just all kinds of messyness on both offenses *sigh*

    I still need to take care of my name change and it's kinda stressing me out. I need to do that, my tabs expire TOMORROW, but the car is in my mom's name and I need to switch it to mine as a "gift" which hopefully won't have a crazy expensive tax on it. meh... Totally stressing me out.

    First- Thank you for the suggestions!! I love love love mustard and pretzels. Yummy. I'll give the popcorn with pepper a try!

    Thanks ladies! :) FTL, that popcorn sounds awesome! I'm a fan of eating spicy or very flavorful foods in order to eat less. Maybe I could try other spices on the popcorn...cayenne? Mmmm The caramel I made isn't solidifying like I wanted, but it still tastes awesome. I even sprinkled a little gourmet sea salt on some, wow. Took the flavor to a whole new level!

    I'm a fan of pretzles and mustard too :)
    I like "spice" as in spices, not fire burining in my mouth hot, which is why I love the pepper. It's surprisingly awesome! Definitely worth giving a try :)

    The Pensacola Fair is this week, so we went Friday night with FI's cousin's family (lots of kids between 9 and 14), so we ran all over and got on tons of carnival rides that I am waaay to old for. I think once you start thinking about your own mortality and that they put up those flying death-traps in a day and a half you start to not enjoy them as much. :)

    Saturday we went back to the fair (please do not ask me how much money was spent this weekend, it makes me slightly ill) with one of FI's friends from school who is a mechanic in the AF and his wife. It was fun, we mainly walked around and ate. The wife is fun but a little bit Stepford, and coming from me, that says something. I'm glad we got together because it sounds like she isn't making many friends on base (they're at Hurlbert, about an hour away).

    She didn't exactly have an inside voice, though, she kept talking crap about this "friend" of hers who sounds pretty awful (whoring around while her husband's deployed, making him miss work, threatening suicide, talking trash to his CO,all that fun stuff). The friend, more like frenemy, is the wife of a Navy man, so she kept making these "Navy wife" comments, which was really embarrasing because: a) I know lots of really awesome Navy wives, and b) we live in a Navy town, and the last thing I want to do while out with my FI is diss on that. I would just change the subject quickly when that came up, but (a big) part of me thinks that an attitude like that is what is keeping her from making friends.

    My Weekend in Pictures!!!

    He's a CATerpillar!! haha.. It's really short on his because he's ridiculously long.  He's not even a year old yet and he's so long and skinny!!


    Did anyone else watch the Alabama/Tennessee Game last night?!  Holy Moly.  It was intense.

    Hike- My go to snack is the 100 calorie packs of whole almonds.  They have flavors, but I like the plain ones. That or some fresh fruit (PLUMMMSS!!! I love plums!) but I only let myself eat 2 servings per day.  If you like cottage cheese, in the summer I make a cottage cheese salad with sugar free jello (my favorite is raspberry!) and pineapple and mandarin oranges (some people add whipped cream, but that kind of defeats the healthy aspect... although you could use lite cool whip)Oh! and I use Low or Fat Free cottage cheese.

    Now I'm putting a pork roast in the oven, drinkin a beer (Rolling Rock Light!!) and trying to finish up some math homework..

    Oh, I like spicy hot! Hot salsa, jalepenos....not habaneros though. Accidentally ate one in guac once, and I thought I was going deaf. That's how hot. Also, I just realized my FI will be home in for Halloween! So I still get my pumpkin carving and Halloween costume! Hooray!

    You can make a jello fruit salad with sour cream. USE THAT. I swear. It naturally takes on the flavor of the fruit, and cool whip is so bad for you />_< I grew up on sour cream layered fruit jello salad for holidays.. soooo yummy

    mmm Plums. :) I like pretzles or nuts with mustard powder on them.. yummmmyyyyy.. make it into a glaze and it can be amaaaazing.
    Sami you have been a busy woman! The brownies look awesome! I like kittys costume :o) soooo cute! The chicken looks great! How did it  taste? I'm pretty scared of making a turkey this year, but my aunt says she'll walk me through it so we'll see... :/

    I honestly didn't do much this weekend. Went riding Friday night, cleaned yesterday, and just relaxed today. We went to a gun show but it wasn't any good :( nothing special.

    you girls should try Orville redenbochers (sp) lime and salt 100 calories its really yummyyyyy!

    I love his books! I don't think I've read that one yet though. That's for the rec. If anyone is looking for a funny book, you must must must read My Horizontal Life by Chelsea Handler.

    Oh I've heard Chelsea Handler's book is funny but she just creeps me out, her show is NOT funny.....but youre the third person who suggested the book so maybe I'm wrong.

    There is lime and salt popcorn??? I really need to eat more popcorn, it's such a good snack. High in fiber!! 

    I'm trying to convince myself to get off the couch and on the treadmill. But then I have to wash my hair......ugh such a process. But then I'll already have one workout done for the week and I'll feel good. Gah!

    Improbably bias because I do like her show but that book is definitely funny. Her other ones, not so much.

    I was super disappointed with her latest book.. mostly because it wasn't by her, but her friends and family.  It was funny, but I missed Chelsea!

    I'm a total food network addict, and it's pretty much constant back ground noise in our house.  I was watching it tonight, and saw a pie called the "Fat Elvis"  It looked AMAZING!!!!!

    FTL-My Chicken was amazing!! I used a roasting bag so it was super moist.. yummm.  I seasoned it with fresh herbs since my mom has a ridiculous garden.  FTR, I never use cool whip, I know a lot of people who do, but I never do.  I usually only make that in the summer anyway, cause I don't generally eat a lot of dairy.  Are you making a pumpkin pie? I Love pumpkin pie.  It's a good thing that it's cooled off here so now it's perfect running weather so then I don't have to feel as bad for tasting all the yummy treats!! I was having to get up ridiculously early to run..

    hmmm I'm slightly interested in James Patterson's new wedding related book.. interesting..

    I have been told that the roasting bag is the only way to go and that basting is
    totally overrated :P So I'm glad to hear that the chicken turned out well for you! I'm' envious of your mom's ridiculous garden. I have a great herb pot garden going but that's about it.
    I want to make pumpkin pie but I bought the wrong pumpkins!!! :( I bought 4 carving pumpkins and for some reason our local grocery store doesn't have any sugar/pie pumpkins.. fail. So I need to go back out to the local farm.
    I'm glad it's cooling down for you now so that running is easier and now crazy freakin' early! :)

FI's OCS graduation week is coming up. 1 for Family Social, 1 for Formal, 1 for graduation, and I really liked this other dress so I made an excuse and said I would be wearing it for my rehearsal.</p>

    Parts of my weekend were awesome, parts were okay...


    I'll start with the not-so great news- FI didn't get picked up for STA21. He's sad, but what do you do? He is sad because he says his eval this year is probably one of the best ones he'll get for a few years (Because it was right before he switched commands, they knew him well, etc). He doesn't have any inside connections, and they didn't pick up many people this year. I think he said they only picked up 87 people total out of the thousands of applicants for all the different programs that STA21 covers. His old CO was the one that called him, and he told him that he was the number one pick out of his command but no one from his command got picked up. He will reapply next year, but it's still a bummer because he was hoping he'd get to move up this way. 

    The good news in this is that now we can have our wedding whenever we want to :D I just have to bust my tail and try to finish up my nursing bridge program soon so that once we get married I can move to JAX instead of having to spend a few months here. I'm sad that I'll be moving away from where I have grown up, but honestly I knew I'd have to do that at some point anyway, and it will be good for me/us. I have to find somewhere to move my horse in JAX area and figure out how to transfer my paramedic cert to FL as well (even when I become an RN, I worked to hard for my Paramedic cert to let it lapse... and FL is the only state in the US that has "additional requirements" outside of National certification from what I understand).

    We had an awesome first premarital counseling session :) We were super excited about it, we were there for 3 hours because our counselor is trying to do as much as we can each time we get together so that we get to do most if not all of it in person instead of having to do it via skype, so that's cool. According to our prepare-enrich assessment, we are a "highly vitalized" couple and in almost all categories we are 90 percent or higher ranked in the compatability of our answers- neato :) 

    Our photo shoot was AWESOME. I cannot wait to see how they came out. We didn't do many of the shots I'd seen that I thought I'd like to do, but that's okay- I'm sure I'll like what we did get; FI looked so spiffy in his whites :) I'll post pics when I get them (it'll be about a month my photog said before we get all the images). He actually brought a second photographer, and we ended up doing about 4 hrs worth of pics, which is awesome considering what we paid! We did some on horseback, did a picnic, and did some downtown. Very cool :)

    We did dinner Saturday night (late after our photo shoot) with my sister and BIL. FI made lentil soup (he's an excellent cook too!); we watched the movie "From Paris with Love"- it was funny if you've never seen it. 

    Church yesterday morning, and then we spent the day together just enjoying each other's company since it'll be a month before we see each other again :( So's life; I think in some ways it makes being together sweeter :)
