Nice!  I don't know Flying Fish, but I've wanted to go to Kat Kora's place (it's on the Boardwalk just outside Epcot).  There's a dance hall right there that's a lot of fun in the evenings, so you should check that out after!  They have a piano bar, too, but that had a $20 cover so we didn't go in - but it sounded like a lot of fun!

I'd suggest making reservations inside Epcot for one of the nights, if you're going into that park at all.  I like the Japanese hibachi restaurant (we're going the night before the race) and the German restaurant best (they've got a whole Oktoberfest show every afternoon - we're going after the race).

Also, if you like seafood, the Beach Club (right next to Epcot on the Boardwalk) has a clam bake buffet.  We ate our weight in clams and mussels - delish!
