I joined this board like a month ago, and promptly forgot to come back...oops. life definitely got in the way. So I responded to my intial post, but now I can't find it. balls. (hope that's ok to say here lol)

I'm a little confused, so I'll jump in... I have that box checked, and the newest 'thread' is at the top for me, but not the one that was most recently responded to.
I'm not sure if OP was hoping for her threaad to pop to the top when she replied to it, but I don't think that is what actually happens (at least it doesn't happen for me).
I unchecked the box & now the most recent post in any thread shows up at the top for me, which I prefer. So looking down the list of posts they're in chronological order from the most recent post on as opposed to when the thread was started.
Got it... so even though TK says 'Start a new "post"', when they say 'sort by most recent post' they don't mean post, they mean thread. Thanks for clearing that up rdr!
I just fail at looking at posts. I didnt see mine, and automatically thought it went missing. Apparently I need my eyes checked because it was a few posts below.

You can go to your profile and see all of your posts.
