Cooking lessons

Tim says for me, they might be a good idea. (This was said with much love, of course)

Anyone ever had cooking lessons? Was it worth it / did it help?

A friend of mine took a 'Knife Skills' course at Williams-Sonoma and he said it really helped, plus it was a lot of fun.  According to him and his GF, he's gotten a lot faster and more consistent with dicing and chopping since the class.  I've been thinking about getting them for H and I as a Christmas gift, actually.

Yeah, I think that would be best for me.

I can bake pretty much anything (really well), but for some reason if it's not a dessert it just comes out all wrong.

I would totally do one that focuses on techniques.  I love cooking and think it would be fun.  One of the excursions on our cruise is a cooking lesson on authentic Mexican food.  I'm trying to convince H but he a no go.  Fuddy Duddy.

I had a friend of mine rally some of her friends and they took a cooking class at Whole Foods.

The FFIL takes classes here and there in Chicago for fun.

Both say they love it, whether they know how to cook, want to learn a trick or just a new recipe they suggest it.

I have this obsession too.  Wanna make it even better?  Brown up some Jimmy Dean Sage Sausage and add that to the pot at the  same time as you add the package of stuffing to the boiling water.

I would recommend them, I've taken several and I really enjoy it.  I've done technique classes and recipe classes.  You can get a lot out of recipe classes too, you learn why it's best to do things in a certain order, things like that.  Two shows on the food network that are good for learning tips/tricks are Good Eats with Alton Brown, and Barefoot Contessa with Ina Garten.  A lot of the meals on Barefoot Contessa would cost an arm and a leg to fix, but she gives a lot of good tips...her cookbooks are really good too.

Well after the first year of me making a cookie recipe I had no yield for, and DH in the end up to his elbows mixing the batter (and yes he washed first) you'd have thought I'd have one by now. So this year I out and out told him I wanted one. And I think it will come in really handy with his recipes too.

    Certainly :)<div>
</div><div>2 loaves Hawaiian Bread (fresh, large dice)</div><div>1 red onion, small dice</div><div>2 large bell peppers, small dice (for thanksgiving I use orange/yellow for Christmas I use green/red :)</div><div>1 medium butternut squash (peeled and small dice)</div><div>2 garlic cloves chopped</div><div>2T chopped fresh thyme</div><div>2T chopped fresh sage</div><div>1lb maple sausage (browned)</div><div>1qt chicken stock</div><div>8 egg yolks, lightly beaten</div><div>1/2C real maple syrup (not mrs. butterworth...the good stuff)</div><div>3 sticks unsalted butter</div><div>kosher salt & fresh ground pepper to taste</div><div>
</div><div>-Brown 1 stick of butter, then sweat vegetables and herbs until slightly tender (10-12 mins) Cool and reserve</div><div>- Whisk together egg yolks and stock.</div><div>-Brown remaining 2 sticks of butter and add maple syrup, add half with egg mixture. </div><div>-Toss bread, vegetables, sausage and egg mix until bread is soaked. </div><div>-Place into a large buttered baking dish (don't pile to the rim).  I use a roasting pan if I make the full recipe, if I make half recipe, 13X9 is a good size. </div><div>-Cover with foil and bake at 350 for 20 mins, uncover and bake for an additional 20 mins. Brush the top with remaining syrup/butter mixture and bake for 10 mins, brush again bake another 10 mins.  (you can do another round if you prefer the top to be a little more crisp, I do)</div><div>
</div><div>Seems like kind of an odd combination, but it's a perfect mix of savory and sweet.  When you sweat the vegetables, it will fill your house with the best smell EVER.  If I could make a candle of that smell, I swear it would be in every room of my house. </div><div>It's time consuming to make, but well worth it!</div>
