We haven't heard some a few of the people we sent invitations too. Our RSVP due date is July 23rd. When after July 23rd is it okay to contact the people as to if they are coming to the wedding or not.
I understand not everyone can make it, but want a good idea of who and how many will be coming. We are also having assigned seating, so this could become a problem if people show up who didn't RSVP.

I would give it a couple of days after, in case some people sent it out on the actual due date.

This! It's sometimes easier to get ahold of people during the week versus a weekend.

If you gave yourself a big window of time then I would wait 4-5 days before following up with people, you will likely save yourself time because some of those stragglers will arrive during that time. However, if your window is short then I would just start follow up right away.

Ditto this. I ended up giving myself about a week before the final guest count is due to get all my follow ups done.
