make your own cupcakes

Hi ladies! Are there any DIY brides out there who have or plan on making your own wedding cake or dessert? I decided that instead of a cake we are doing cupcakes and I have 3 flavors that I want to do and would LOVE to bake them myself, obviously with the help of my maids. We are having 100 people at the wedding and I dont think that it would be a  huge stress for me to make them the week of my wedding. I plan on taking most of that week off anyways. Any tips on this idea?

    Have you asked your bridesmaids how they feel about helping you with this project? And are you sure you won't be stressed and will have time? I personally could never handle it.  My florist says she didn't even do her own flowers at her wedding b/c she was just too busy!

    i plan on making my own wedding cake. i do make wedding cakes all the time so i know how long it takes and how time consumming they are. i am getttting all my diy projects out off the way asap so when it comes time to do the cake its the only thing i have to worry about. if you do go through with it do the assemby line method, its the fastest and most effective way. i would spend the morning or day before baking all the cakes and making (or colouring store bought) icing. then the next day or evening decorating. have one or two persons  dedicated to each step (icing, making decorations, putting decorations on the cakes, putting cakes away)

    We're going to do our own cupcakes.  We're keeping it pretty simple, though -- we're using cake mixes and store bought icing that we're just going to add some color or flavor to here and there to jazz things up.  But no fancy decorations, maybe a piece of candy or fruit on the top of some of them, if that.  And it's a small guest list (around 60, 75 tops) so it's not a ton of cupcakes.  We've been refining the flavor combinations whenever there's an excuse to make cupcakes, so by the time the wedding rolls around there shouldn't be any surprises.

    I agree with rascal, though, I think the key is to make sure that's the only thing you'll still have to do that close to the wedding.  My plan is to have all the other projects done by at least a week before the wedding, hopefully 2 weeks before, so those last days won't be so hectic.  We love making cupcakes, so as long as we're not rushed to get them done I think it'll be a fun thing to do together to unwind before the festivities get underway.

    Ok thanks for the advice! I too plan on having EVERYTHING done a week or two before the wedding so I do have the time to do the cupcakes. I will have the whole week off before the wedding and being the MOH for my sisters wedding she has been a big help along with my own expierence helping her how much time you have  the week and even the few days before the wedding. I am using my own receipe for one flavor and then store bought from boxes for the other two flavors and am in the process of trying everythinng out and tasting now. I do think it is a nice personal touch to the wedding day that guests will love! Thanks again for the advice and good luck with you cake/cupcake making for the big day!

    I made my own cake, and it was the single largest source of stress in the whole wedding planning process. Have you thought about the logistics of this? How many cupcakes will your oven fit at once? Where are you going to store them? Have you checked with your venue about bringing in food not prepared in a licensed kitchen? Some venues STRICTLY forbid outside feeod being brought in for liability reasons.

    I'm making my own cupcakes and have one of my friends coming to help.  We're still sampling recipes but Duncan Hines Incredible Middles - Triple Chocolate Decadant Cupcakes so far is the winner.  I only need to make about 4 batches, so it shouldn't be too bad and I'm going to make them about a week ahead of time and freeze them (not iced) and ice them the day before.  I bought some sugar flowers on the internet to match my colors and a cupcake tree and decorating it myself.  Good luck!

    Thanks jmvalli thats the other plan I had too was to make them ahead of time and freeze them! And thanks for the advice, I'm making about 4 batches as well! Good luck! The flavor sounds good too!
