Our reception is being catered by the guys that run the B&B where it will be held. They make AMAZING food but we've got one side dish left to choose and they basically just said let them know whatever we want.
It will be buffet style with the following:
Bread:
Mixed Rolls
Salad:
Romaine Salad
Main Dishes:
Vegetarian Lasagne
Baked Chicken
Chicken Fetuccini Alfredo w/Asparagus
Pork Tenderloin
Side Dishes:
Cheesy Bacon/Ranch Potatoes (Look and taste fancy and AMAZING)
choice of baked potato for vegetarians/gluten-free/whatever
Green Beans Almondine
And we get to pick another side dish. I don't want to do another potato or anything w/pasta b/c there's already so much carbs. FI doesn't want to do a general mix of steamed veggies.
This seems like such an easy question but somehow I'm drawing blanks! Any suggestions?!?

spring - fava bean salad, roasted leeks, artichoke gratin
summer - marinated grilled veggies, tomato basil bread salad, tabbouleh, www.finecooking.com/recipes/corn-sweet-onion-zucchini-saute-mint.aspx" target="_blank">corn sauté with zucchini, mint and cilantro (it's my all time favourite summer dish)
autumn - maple glazed acorn squash, apple & rutabaga casserole
winter - roasted jerusalem artichokes, carrot fritters
