Entree help!! Shredded chicken? or ....

I am having a hard time deciding on entrees for the wedding.  We are trying to save some money and my family decided that they could cook the food if we wanted them too.  I did not know if shredded chicken was nice enough for a wedding.  we also through about pulled or BBQ pork, BBQ chicken wings (I perfer boneless but the fiance thinks boned would be better) or ham of some sort.  I don't want both of my entress to be BBQ.  I am up for any other ideas as well but does anyone have any suggestions?

  • I feel like if you're doing BBQ, everything should be BBQ.  The sides and whatnot should all go together.  Could you do pulled chicken and pulled pork?  Then you'd need something if you have any vegetarian guests.  I'm always weary of DIY food for large groups.
  • Your best bet is to choose one or two entrees that do not require a lot of work on the day of the wedding. When I have thrown parties, I've done things like make a couple of large pot roasts, with veggies, then take the juices from the meat and veggies, and mix them in a blender to make a sort of gravy. I served the beef sort of cut/shredded, and added nice Hawaiian style rolls for roast beef sandwiches. This can be done ahead of time and warmed on the day you are serving it.

    Ham is another good option, can be made ahead of time, and warmed.

    I see you are in Toledo. Check out Gordon Food Service stores as well. They sell a lot of really good frozen foods in large aluminum chafing size pans. You can get casseroles, meats, side dishes. They even sell the chafing sets with sterno.
