I've never watched my sodium intake but I'm going to start trying to cut way back. I went to the grocery store today to get ingredients to make spaghetti and I realized how much salt was it the pasta sauce. I use Ragu Traditional and it has 25% for 1/2 cup!! And diced tomatoes have like 30% in 1/2 cup. I'll probably just buy fresh tomatoes now but what about pasta sauce?

If there's Stop and Shop where you live, their Nature's Promise organic sauce that has 350mg/serving or 15% DV. You can also make your own... there are tons of recipes on allrecipes.com.
I usually do the fresh tomatoes, cooked down, but have a very hard time finding decent ones in winter. Instead I will cheat with a can of diced tomatoes cooked with a little sauteed garlic. But here's the Mayo Clinic's LONG list of low sodium tomato sauce options!

First you have to blanch them. Boil some water, use a slotted spoon to put the tomatoes in, and lift them back out when their skins start to split. It'll be under a minute, so keep an eye on them. Throw them into a colander and run cold water over them, or just plunge them into a pot of cold water nearby.
Cut each tomato in half lengthwise. You'll find that the skins fall right off them. Discard the skins and the seedy goo from inside.
Chop up the fleshy peeled de-gooed tomato chunks, and use them like you'd use a can of diced tomatoes! You can even freeze these to use later, so you can spend an afternoon blanching/peeling/dicing tomatoes and then have your own diced tomatoes in the freezer whenever you need them fast.
