Favorite Recipes?

FI and I have been eating out wayyyy too much. Anyone wanna share your favorite recipes? I'm a really picky eater so it's easier to eat out sometimes. FI does a lot of the cooking but I keep saying I will lol. I'd even be willing to put this all in a word doc and send it out to everyone as a kind of recipe swap if anyone's interested!

  • I'd actually be intriqued by having a something with bunches of new recipes, I'm always looking for new things to cook because we're so sick of eating the same things and we're trying to eat a lot better.  We're both fairly picky as well although I've been significantly expanding my tastes lately and Fi has really been working on it too.

    These are my favorite. I make them with rice and stir fry veggies.

    Chinese chicken wings:

    1 10lb bag chicken wings
    2 bottles soy sauce
    1/2 cup brown sugar
    1/2 cup white sugar
    1/4 cup oil
    1/4 cup water
    1 Tbsp garlic

    Mix everything except chicken in a large pot. Add chicken wings
    Cook on high on stovetop, covered, for 45 minutes. Stir occasionally

    I use some of the juices to put over my rice & veggies. So yummy!

    ETA: And yes, it would be great to have all of them in a word doc!

  • I love recipe swaps! I sent my MOH a link to a shower idea where each guest brings a recipe and they all get put together for the bride. Hope she does it!

  • I'm mostly a baker but FI and I love chicken quesadillas. I dice the chicken up and cook it in a pan with olive oil and taco seasoning/water, then we put the chicken onto small taco shells, put our toppings on, then put another shell on top. You don't even need cheese. We're pretty picky and plain eaters, too. We get a bunch of pasta and a 10lb bag of rice and that's most of our meals. With rice we microwave it with olive oil and basaltic vinegar and salt (I like putting seasonings in, too). Sometimes we mix in some Pomi (strained tomatoes basically, we use it for pasta sauce). We love making calzones, too. The nature of it means you don't need cheese, you can fill it with whatever you want. We get pizza dough from the store (not pre-cooked, the balls), make them into two oval shapes, put our toppings on, then fold them over and seal them. I then cut holes in the top with a knife and put a layer of olive oil

    I'm on my phone so I can't post onto the doc on the FB page, but I'll try to remember when I can. Also, I do have Italian and Irish soda bread recipes that I can post when I get my computer back.

  • Kaitlyn, do you have home goods/marshalls/tjmaxx near you? I highly recommend purchasing some cookbooks from there.  It'll be like 60% off and high quality.  Try food and wine or WS or something and flip through.  If you like a few in there and they don't seem crazy hard, then get it!  I get so many recipes from there.  

    Why don't you eat seafood? JW because it's my favorite.

    I have a TJ Maxx near me I'll definitely try that! Everyone in my family loves seafood but it's something I've just never liked. When we go back to Texas for vacation they always get crawfish, gumbo, etc but I just can't do it lol
  • I don't eat much seafood either; only lobster and shrimp. Its a texture thing.

    My aunt tried to get me to eat tongue two years ago. I couldn't just because it was tongue and my cousin was like the texture will really turn you off lol
  • I don't think I would try tongue either.  I love seafood though most of my recipes are that.  Having a few staple recipes you like is key though.

    Yeah I need to get some from my mom that we both love. That would help a lot because they're not too hard and could have leftovers for FI's lunches
  • One of our favorites is chicken pesto pasta. We buy pesto from Sam's Club (I can't remember the brand)... Basically we just cook the chicken & the pasta (we usually use farfalle for this meal). I usually cook the chicken in a frying pan with some of the pesto, garlic, salt, and pepper. We add the chicken to the pasta along with a little bit of butter, parmesean cheese, and loads more of pesto... It's delicious:)

    I hear ya. I'm on campus Tuesday and Thursday 9:30-3:00 and MWF 10-10:50, 2:10-3 and I also work on some of my off hours on campus.   • I make a pb sandwich usually.  Bring an apple, and some veggie sticks.  If you get into a habit/make it the night before it makes life way easier.

  • Buffalo Chicken Soup:

    3 (10.75 ounce) cans condensed cream of chicken soup, undiluted 3 cups shredded cooked chicken 1 cup sour cream 1/4 cup hot pepper sauce 6 cups milk


    Put all ingredients in crockpot, cook on low for 4-5 hours.

    I'm really picky too, Katelyn. I don't eat seafood either. Or cheese. And my food can't touch on my plate. My FI says its like cooking for a 12 year old but I like what I like

  • Zims, try sandwich bags.  It's cheaper.  I pack them and it takes two seconds.  You could always do a few at once.  All of this is about making time.  Sometimes I run out the door with only a snack so I'll buy soup at school, but if I limit doing that to once a week, it's still cheaper/healthier.  Also, glass tupperware containers are your friends. 
  • OH! and I got my lunch box (pink) and FI's (blue) at Target for like $3.50 each. 
  • This is not remotely healthy, but love Paula Deen's Cheeseburger Meatloaf. We have it twice a year, but love it! I have another recipe I will share when I get home.
