Ideas for subtle medieval theme?

Hi all,

I'm wondering if I could get some input and ideas. My FH is finally getting into the whole wedding planning thing (which is great, considering he was going with his usual "whatever you pick is fine" routine). So now we're looking at redoing our theme a bit. 

He wants to do a mideval style theme (which actually fits us perfectly). The only thing is we're having trouble coming up with ideas that aren't too over the top. So far we're doing wax seals on the invites and we're planning on getting some  pewter champagne flutes like the photos below (we're still deciding).

Does anyone have any other ideas or suggestions? Our ceremony and reception will be at the same place--it's an old victorian house in the foothills of Colorado, and weather permitting we'll have the ceremony outside on the verranda and the reception inside.

I also have a TON of silk wildflowers that I got from Michael's when they were on sale that now I don't know what to do with (I was going to put them in vases on top of old books when we were going for a literature theme. Am open to ideas on how to use those too!
