Isomalt coral as a garnish?

Has anyone worked with this before?

I saw it on cake boss. Buddy made an incredible aquarium cake out of melted isomalt poured over ice.






I was planning to use rock candy.. but am thinking a smaller version might be really pretty as a signature drink garnish, or used for something?! I just love the way it looks!!!

    I worked with Isomalt in school.

    Other than making coral by pouring it over ice there are a couple of more uses.

    You can make your own mold by filling a pan with corn starch and pressing shapes into the starch and you have a mold. Pour the isomalt into the mold and let it cool. (We used seashells in school)

    Also if you place isomalt on a silpat and place another silpat over it, and bake it in the oven for 10-15 minutes, you end up with a sheet that has a bubble effect. You can break it up and use it how you like.

    I do have to caution that it can be very dangerous to work with, you are essentially working with melted sugar which is VERY HOT. Getting any of this on your skin can cause instantaneous severe burns, and trying to peel it off may result in some of your skin coming with it.
