Lodge-style weddings

So my fiance and I FINALLY found a location that we both like - a local park rents a lodge right next to the river. It's a beautiful location and we really wanted something near the water....(I mentioned this location in the post about drink packages)

My only dilemma is..the only things included are literally the table and chairs. The entire set-up and tear-down would be on us. Now we would have the facility ALL day 10:00am to 12:00am. I'm thinking realistically - I could get there and set-up everything up for a 70 person reception in a few hours. Part of me likes the idea of really being able to personalize everything...even how the room is laid out - and part of me is terrified that that is a HUGE undertaking. The catering companies we looked at would take care of cleaning away plates from tables and maintaining the buffett..but other than that...

Anyone have a wedding like this - and how did you handle it?
