Alcohol at the reception?

Ok so FI and I are having a cost crunch, so we're looking at things we can cut. We're having an evening wedding at and art museum with a heavy hors devours reception immediately after in the same location. One of our higher cost items is going to be the alcohol. We were planning on serving beer and wine we've provided, but we would still have to use their bartender and pay a corkage fee (no way around this). But if we decide not to have alcohol we can cut both those fees, and FI is willing to put the money he would have spent on alcohol towards the food for the reception. This would keep us much closer to our original budget, but my question is this: Will people really miss the alcohol? I feel like it's at a nice location and a saturday night and people will expect it. It was something I had really planned on doing, just our financial landscape has changed. But maybe I should just suck it up and pay the extra. Anyone out there not serve alcohol at a saturday evening wedding? how was it? did people still dance etc?? I've been to some wedding where people just sat around and looked bored, which is my ultimate wedding nightmare. I'm spending all this money for people to enjoy themselves, not be bored... :(
