Hotel-block room night minimums AND good brunch spots in Fishkill?

Hi! So we are slowly narrowing the list of hotels for the hotel block - Hotel Sierra Suites, Courtyard, Hilton Garden Inn, and the Fishkill holiday Inn. (Haven't decided which one yet). But is a two night minimum common?!  (I have heard from a couple on the list that for the hotel block the guests are required to book two nights.) Is this common? (We are not getting married on Memeorial Day weekend. If we were, I'd be alot more understanding)Just curious if this is normal.Also, what are some good places in or around Fishkill for Brunch. (Already have Ruby Tuesday and Cracker Barrel on the list of places to check out. I feel that Double O grill and Perkins are too far. Of course FI reminds me he loves Perkins right after he suggests Cracker Barrel!)

    We have blocks at the sierra and courtyard...there is something i didn't like about hgi but don't remember now what it is...and we wanted everyone on the same side of route 9. sierra had a two night minimum because of the time of year (foliage) but courtyard was one.  we def. have more bookings in the sierra i can tell you.

    I have a room block at a Hilton the week before Christmas and there is no minimum.  Maybe because of the time of the year  - if it was a week later it may have been different.

    Thanks fo replying. Ww are going to list both Hotel Sierra Suites and Hilton Garden Inn. Now just need to figure out where to go to brunch!

    I'm getting married near FIshkill too. Anyone know of a place for brunch? I'm looking for something more formal than the Cracker Barrel.
