Dear Macaroni and Cheese

Re: Dear Macaroni and Cheese

  • Definitely don't use the whole jar.  I think Cheezwiz might have been the only fake cheese available in my mom's hometown for awhile.  It's not bad.  You might have to use a little milk to help thin it out too.  But not too much because then it ends up all runny and then I get mad.
  • You know what is good? Cheeze whiz on that round brown bread with green olives on it. Yup.

  • Whit - I'm not sure I could do the green beans in bacon grease. I just eat them plain.

  • Nugget - temerity dot jane at gmail. I will trade you for my excellent baked ziti recipe if you'd like. No roux required.crfische - I can't even boil correctly half the time. My pot always boils over, my solution to which is apparently to wave a wooden spoon going "EH! EEEHH!!" til Buddy gets it.

  • OH MY GOD ME TOO!!! It ALWAYS boils over. I'm like HEY! WTF, water? Why are you white and bubbly? Then I move it around on the burner so only one side is bubbling. I'm an idiot.

  • Green bean related - my mom makes this fantastic horseradish cream kind of sauce that we would put over green beans, asparagus, turkey, our forearms, it makes even cannibalism delicious. I have been inspired by this thread to get that recipe from her tomorrow.

  • FI made me homemade mac and cheese it's awesome. The only other stuff I've had is totally italian the way my mama makes it, complete with tiny meatballs. If you didn't think mac and cheese could be improved on, you've never had it with tiny fork size meatballs. Uh-mazing.
  • Oh, and whit, my grandma (the non-italian one) does green beans like that too. And they're cooked with like an entire ham in the same pot...
  • Whenever my water starts to boil over, I stand there and blow on it frantically. I actually almost made myself pass out once doing that. It never occurs to me to turn the heat down.

  • Funny you should mention that, Nugget. I just learned that LAST WEEK when discussing this problem of mine with my girlfriend.

  • Every time my water boils over, Buddy and I have a variation on the same conversation:Him: Well, did you put oil in the water?Me: No, I put salt in!Him: You're supposed to put oil in!two weeks laterHim: Did you put salt in the water?Me: No, I put oil in!Him: You're supposed to put salt in!He changes his mind about which is the right way all the time, yet HIS water NEVER boils over.

  • A bigger pot and less water = no boiling over.  I've got more where that came from.
  • Both mac and cheese recipies please?? Louisvillebride@yahoo.com Oh, my FMILs green beans...put a large can in the prssure cooker, half can water, bacon, crisco, rubbed sage, bullion cubes, onlion flakes, salt and pepper. Pressure cook for about 20 min. Ah-mazing. Anytime I make it for anyone or FI takes it to work, we never have any left over.

  • Whit - I'm sure Nelson would love it, but I probably wouldn't. I don't like bacon, so I'm guessing I wouldn't like the grease either, even if it tastes nothing like it. Hmm.

  • Oh, and sugar. Sugar is what makes them so different

  • I stopped adding oil to boiling water awhile ago.  After seeing countless episodes on the Foodnetwork, you don't need to add oil to your water.  It helps to salt it though.
  • Uggh, I hate homemade mac and cheese.  I LOVE Velveeta, but I can never get into it when paired with macaroni.  Don't even get me started on baked macaroni and cheese.I will eat the blue box all day long, every day of the the week, though.  Me likey processed! :PAnd whit, my family adores green beens in bacon fat.  I definitely know what you're talking about there.
  • Yay noonies! It's interesting how many people do that. I just thought it was a Southern thing. LVB, YOU come visit me! :)

  • You don't NEED to add oil to boiling water, but if you have water overfilling the pot, it helps.

  • I use bacon grease in my eggs. Learned it from mom. Never used it in the green beans.
  • I used to fry my eggs in soy sauce. God that pissed my mom off.

  • Sigh. So many tips from people who can actually cook. I've accepted my lot in life. Whatever I cook will, without fail, fall somewhere on the scale between "Almost right" and "Well... nobody DIED."

  • And then people are all like "Do you know how much money you save buying groceries and cooking at home?" And I say, "DO you know how much money I save by just not having to buy groceries and then throw them down the disposal because they aren't edible? Yeah, stfu."

  • Oh yeah, another good and super easy recipe. Next time you make scrambled eggs, add a little milk, salt, pepper and grated parmesan cheese. Lots of it. Like the kind Kraft makes in the green container that you put on pasta. SOOOOOO good.

  • Ha! I am lucky my grandfather was an offshore cook and he always let me help him cook when he came home. I am losing my touch since the list of things my H will eat is shorter than the list of things he will not eat. I cook the sameolshit.
