Tipping Caterer

I am having a hard time determining what is an appropriate tip for a large catering company.  When my fiance and I first booked our caterer, we asked if gratuity was included, and the coordinator said "No, but keep in mind that they are payed a great hourly rate."  What does that mean?  Should we tip?  Should we not tip?  Should we only tip 10% instead of the usual? 

Any advice?
