  • MK - once we pay off my car and my student loan we could totally live on just H's income.. .so, not gonna lie, thoughts of SAHW'ing are in the back of my head too if I don't get a job.  And we've always said we don't want our kids in daycare full time, so I'd probably be taking a few years off or trying to work from home or part time once we have a beh-beh anyway... 
  • Well right now there's no babies in our future. I just don't know what I'd do with myself. I would definitely be able to focus on myself for a change and do things I like vs. things I feel I have to do.

    Whit I just realized the oatmeals may be on my Sweet Goodness board because I tend to pin anything that's sweeter over there.

    I tried to ignore that board because it was too tempting :) I did see some oatmeal, no smores oatmeal though.

    Sure! It's Ina Garten's. Every recipe of hers that I've tried is perfect.

    Can you make it ahead of time for heat/grab and go?  I don't get up early enough to make breakfast before work.  I made scrambled eggs this morning though.

    ETA - the oatmeal, not the soup - clarity.
  • That sounds delicious LC!  Thank you.  I don't like it chunky, so I'd puree it smooth, but that looks awesome.

    I don't either, which is why recipes for breakfast are hard for me. I will definitely make a batch of the frittas and baked oatmeal next Sunday. I am making my grocery list right now! That way I have a couple options to rotate :)

  • Hi all, LC that soup looks great.  I think I will try it this weekend, since we have been go, go, go for so many weekends.  We agreed we are staying home from Friday night until Monday morning.  Hopefully the new couches will get delivered by Friday so we don't have to fight over the one chair in the family room.
  • One of my favorite things for breakfast is Chobani plain fat free yogurt with truvia, vanilla extract, and Post Select Pecan & Grain cereal. I love it, it's quick and healthy.

  • Whit, you can make a scrambled egg, put it on an english muffin with some cheese, ham, veggies, whatever, wrap it in plastic, put it in a ziplock or freezer safe storage container, and store them, then nuke them for about 30 secons at a time until it's hot in the morning (shouldn't take more than a minute or so).  Obviously you'd make more than one at a time.

  • Loopy I have a mason jar oatmeal recipe pinned on my Delicious Bites board I believe. I've made that and put it in 1/2 pint mason jars to have single servings. I eat my oatmeal plain so the jars were the perfect size. If you liek to add fruit and nuts and stuff put them in the full pint jars.

    I LOVE Chobani Champions (the kid's yogurt, haha) Honeynana, with a tbsp or so of PB mixed in.  It keeps me full for hours.  Yay fat and protein!

  • I usually do Chobani (flavored - there are 4 or 5 that I keep on hand and just grab what's in the front of my fridge) and a granola bar for breakfast, but it gets boring sometimes.

    This is the hardest part of eating healthy. you (general you) find things that work so you stick with them, but then they get boring. Insted of hunting for more new things (like Whit's doing) you slip back into bad habits.

    Yeah, I like yogurt, but that's my issue. And I just can't get past wanting something hot.

  • Whit I just pinned 300 calorie meals Whit if you want to check them out. Obviously I can't vouch for them since I just pinned them, but they may give you some good ideas.

  • I think I need to do some pinterest cleanup. I'm thinking I need to add a breakfast board and maybe some other food boards to simplify the ones that are there. And split out my home board to different rooms of the house.

  • Mk, thanks! I'm getting so many good ideas, I can't wait til Friday (payday!) to go grocery shopping. I'm going to have to make do with what I've got at the moment, but yum yum.

  • Yeah, I end up driving through McD's for a egg bagel or driving through starbucks for a hot apple spice and a scone or skipping breakfast entirely when I get sick of yogurt.  Or someone will bring donuts or other pastries in to work and I'll eat one of those instead.  Not great choices.
  • Who was talking about the Jimmy D-Lights earlier? Was that here or over on SB. We bought the Canadian bacon ones this weekend for super quick breakfasts. They were tasty and pretty healthy. Obviously making them at home would be better, but for something really quick when you haven't been able to prep something, they're great. Something to consider having on hand for those days your sick of yogurt too Loopy.

  • I've bought those, they can just get expensive. $4 for what, 5 of them? I know that's less than $1 each, but still. I'm working on cutting our food bill down.
