Favorite homecooked meal

  • Buffalo Chicken Mac 'n Cheese

    Ingredients:
    - two chicken breasts (boneless, skinless), roughly diced
    - 400g whole grain elbow macaroni pasta
    - one small onion, finely diced
    - two garlic cloves, minced
    - 3/4C hot sauce (Franks works well)
    - 200g Fontina cheese, grated
    - 250g Pecorino Romano cheese, grated
    - 200g Mascarpone cheese, softened
    - 1-2tsp dried thyme
    - 1-2tsp ground nutmeg
    - salt and pepper to taste

    Prep:
    *Preheat oven to 375F

    1. Heat a non-coated pan on med-high heat, adding olive oil once heated.
    2. Season diced chicken with salt and pepper, add to pan with onion. Cook about 5-6min.
    3. Once chicken begins to brown and onions soften, add minced garlic, stirring frequently for 2 min.
    4. Add hot sauce and a small knob of butter. Simmer until slightly thickened. Set aside.
    Meanwhile...
    5. In a large pasta pot, boil water and cook elbow pasta al dente, about six to seven minutes (for dried pasta).
    6. Drain pasta, reserving about 1/2 cup pasta water.
    7. While pasta is draining, use the pasta pot and melt a knob of butter in it, adding the thyme once melted.
    8. Pour the pasta and 1/2 cup pasta water back into the pot with the thyme, stirring to coat.
    9. Keeping the pot on a medium-heat light, slowly stir in the Fontina and Mascarpone, and HALF of the Pecorino Romano.
    10. Stir until melted, seasoning with salt, pepper and nutmeg.
    11. In an oven-proof casserole dish (spray with nonstick cooking spray), spread half the macaroni mixture across the bottom. Top with chicken/hot sauce mix, then add a final layer of the remaining half of the macaroni.
    12. Top the macaroni and chicken with the leftover Pecorino Romano and grate a bit more nutmeg over the top.
    13. Bake for 15 minutes. Serve hot.

  • Moosey do you eat your stroganoff w/ rice or pasta?  And also do you use ground meat or steak pieces?  Do you have a recipe.  I make mine from scratch out of the top of my head so it never tastes the same.

    I don't use ground meat and I eat it with egg noodles.

    I find various recipes online so mine never tastes the same either.  But it MUST use real, fresh mushrooms and sour cream.

  • Mmmm.  Egg noodles!  I usually do mine with linguine or sometimes mashed potatoes.  As a kid my mom would use ground beef, but I always do ground turkey meat balls.  Now I am craving it.  I was afraid I wouldn't be able to make a decision.  Haha.
