We make a seperate card to include with the RSVP cards that read chicken or steak.  I think three is the least tacky although maybe its odd to have to have it on seperate cards?

    You can't force people to eat chicken... what if they are vegetarians or kosher? You have to provide more thajn option to eat at least. So I would definitely not do #2. I would also not do chicken OR steak.. again, vegetarians.

  • As to the vegetarian/kosher thing: I assumed (perhaps incorrectly) that those would be available with any option you listed. At every wedding i have been to and at every venue I looked at, this was the case.

    I think she was just giving us an example that she would give her guests options and then they choose one.  I don't think she was actually saying that the only choices are chicken or steak.

    For your particular circumstance, I would say #1 ... although plating a two-item plate would be great, it may not be in your budget.  Plenty of buffets are set up outside, most of the conferences and seminars with buffet lines have it set up in the foyer or outside of the room, with easier access to and from the kitchen for refills, cleaning up spills, etc.  So there is nothing wrong with that.

    And having it on the dance floor is an option, but you would have to coordinate with your intro.  There might be some difficulty wheeling the buffets in after you do your first dance or grand entrances, if everyone is already seated.

    Separate cards would also work, or if there's a way to attach the card to your existing RSVP card, you could also do it like that.
