XP: Help on DIY Floral centerpeices

I want to recreate a table similar to this one. I love the subtle use of succulents. I was wondering though if anyone knew anything about succulents? How long can they survive outside of soil or would something like this kill them? Any suggestions on how to conceal the root? Or do you just cut them off? Does anyone know a good source for purchasing them?

Thank you! They were at a local bridal show as you came inside the building. It was the third table I saw and I kept leaving the venue to go look at it again. The pictures don't even do it justice! In person it was much brighter and more cheery!
