Crowdsurfing Invitation Ordering Issue

So I have a problem--after much back and forth with the various family members who are paying for the wedding, we finally all decided on an invitation we all like from Wedding Paper Divas. I ordered the Thank you card when they were on sale about a month ago. Then two weeks ago, I went to buy the matching address labels. I couldn't find them by searching the website but when I spoke to a Chat specialist online, they gave me the link and I ordered them and all was fine. I ended up getting them last week.

Now I am at the point where I want to order my invitations, RSVP cards and enclosure cards but once again, when I search the website for their name, it's not there, but when I access the URL that I have saved, all is perfectly fine and I can customize them. I would go ahead and order them but for the fact that the earliest I can schedule my tasting for is the end of June. Now, I could just put "Chicken, Fish, or Vegetarian" as options on the RSVP card but the problem is my mother already thinks it's super tacky that we are asking what people want in advance and if we dont put down exactly what people are getting, it's going to create even more drama in her head.

So here are the options I am thinking of:

1. Order the Invitations and enclosure cards and wait on the RSVP cards and keep fingers crossed that they're still available and if not see if they'll create plain cards with just the matching font and colors.
2. Order nothing, hope that everything is still available and if not, lose out on the money already spent on Thank yous and address labels.
3. Order everything and just not approve the proofs until after the tasting in a month.

Is there an option I'm missing? Has anyone tried Option 3? Is there any other feedback on this dilemma?

    I think it's fine to just put basic options on your RSVP cards. If you have a wedding website, you could include more specific information about meals there when you have it. That being said, your address labels and thank you cards don't have to match your invitations if you do end up having to order different invitations.

    I would suspect they would cancel your order if you didn't approve the proofs within a certain timeframe. I think I would go with the first option in this case.  I also agree with @misshart00 that your thank you cards and address labels do not need to match your invitations.
