I'm not a fan of real flowers (they stink to me). And even though I'm finding pictures of beautiful bouquets and centerpieces, I'm now thinking of making paper bouquets and centerpieces. Has anyone else done this or seen someone do it?

Do you mean stink as in you don't like the scent? If so, anemones, poppies, calla lilies, and amaryllis don't have much of a scent.
I've seen really pretty pictures of paper flower bouquets or even brooch bouquets. Just keep in mind that it will be very time consuming to make pretty ones. You also don't have to have floral centerpieces if thats not your style.
I made a couple of paper flowers before my wedding to see if it would work. It did not go well. They took a lot of time and did not come out nearly as nice as I would have liked. They also started to fall apart so making them ahead of time would have been an issue and the only way to do it was to make them ahead of time because of how long they take.
I'm debating doing paper flowers also. I've been playing around with the idea and have made several with various types of paper. I think they turned out awesome. The ones I like best so far are ones I made using vellum... they have a nice soft look to them. I also made some using the same paper I used for my invitations (sparkly dark blue). If I go that route, I think I'll do mostly the white vellum with a few blue ones mixed in.
But, I also am playing with the idea of silk flower bouquet.
