Random fact for the day: The original red velvet cake recipe called for something (vinegar, maybe? the ingredient escapes me) that had a chemical reaction with the cocoa powder and that's what turned the cake red. Now people just food color chocolate cake. But when red velvet cake made its first appearance, in the late 1800's, early 1900's (I think) it didn't have food color, and the red was a chemical reaction between ingredients. Yeah I'm the nerd who looks this stuff up.

I was thinking the same thing---but, I'd lump everyone in this category that lives somewhere abroad and wonderful, and then complains. And when they are called on the complaining, the response is typically "Well, if you lived here, you'd bitch about it too"---which, may be possible, but 99.9% of us will never be afforded an opportunity to find out.

Lots of baking things require a small amount of vinegar. You can't taste it at all.

I've used vinegar in cakes that call for sour milk.  I don't often keep sour milk on hand, but vinegar does a fantastic job of souring it.

But it never turns it red.

b/c it causes an acid-base reaction that makes bubbles and makes the cake rise. All cakes need something to do this or they end up like brownies, or blondies.

  • I flame red velvet and rainbow cake. BARF. I loathe red velvet cake. I had to choke down a piece last summer when my sister made one for my birthday, and it was like eating a turd.

I also flame Kiki for not telling us where she decided to vacation in NC. It's like she thinks I'll stalk her or something. Which is a valid fear, but still...
