    And for a new thing...My BF and I got a roommate last night. It is so weird because it has just been the two of us for almost a year. He is Korean and he completely filled up my pantry with his food. I told him that since he filled up my pantry he would now have to cook for us. I'm not sure if he fully understood my demands or not. Stupid language barrier.

    I'm Cate, I've been here nearly a year now. 

    Deburnin - how's the foot doing?  I just remembered that, and hoping you're back to normal!

    Lyn - do you happen to have an awesome kim chee recipe?  BF loves the stuff and wants to make some.  My Irish roots of bland food don't properly prepare me to cook something like that.

    Something to share - I'm thinking of surprising BF with a weekend getaway.  We don't have any vacations planned for this year yet, with a vague idea that we'll go to Costa Rica with my family in October but that's pending my Dad deciding he's ready to commit and put down deposits.  So I was thinking of taking a Friday off and heading to Cancun or Jamaica for an all-inclusive for a weekend - it's only an hour flight from here, so a 3 day weekend is totally justifiable. 

    ETA:  And here's a picture from my Halloween costume that makes me laugh:

    Bella - I hope you hear something soon. The suspense is killing me as I'm sure it is you too.

    PolkaDot - I love boxers. My parents have a ten year old boxer and she is really sweet. She loves to lean on people and she is very motherly to my parent's other dog which is a yorkie. The only big problem our boxer has is that she has tumors all over her body. Right now she is getting a really fast growing one inside her mouth and I'm sure it is making it hard for her to chew, which is really sad. Hopefully my parents can get that one removed soon.

    Lyn - I love your dress. You should totally get it!

    Sapphire - Can I move in with you? I love that kitchen.

    Paige - Molly is too cute with her tongue sticking out.

    Bren - Can I go with you to Peru?

    Cate- It's pretty much back to normal! I'm walking around completely fine. I can't really bend my toe anymore, but the Dr said that might come back in a few months. The toenail is about halfway regrown (apparently it's growing insanely fast lol). The only thing my foot really doesn't like is tight shoes.

    Oh and I am totally a fan of weekend getaways, so do eet! :)

    Hello all. I went to the San Diego Zoo this past weekend and saw the baby panda (who is now 90 lbs) and fed giraffes (which was super cool).

    I am still on my diet although I do not think it is doing that much good. Frown

    The main topic of interest is the Superbowl this weekend. I can't believe I actually called the Pack and the Steelers in that post a few weeks ago and it actually happened. Of course we are cheering for the Packers as FI is from WI so he is a HUGE Greem Bay fan and since I am from Cleveland and Browns fan's HATE the Steelers.

    Who are you guys cheering for if you will be watching this weekend?

    NikNik- Yeah, my parents have boxers and they also love to lean on you to get your attention and while you're petting them. Tumors seem to be pretty common in boxers... it's sad! My mom and sister both had to have their boxers put down when they were old due to tumors. Hopefully your parents can get it taken care of!!

    My bestfriend is Korean, her mom was always making batches when I came over to visit.  Hmmm home made kimchi. 

    Ingredients:
    <ul><li>2 medium size napa cabbages</li><li>salt, sweet rice flour, sugar, water</li><li>4- 6 cups of hot pepper flakes</li><li>fish sauce, white onion, fresh garlic, ginger</li><li>green onions, Asian chives (flatter leaves, they look limp)</li></ul>

    Cabbage Prep:
    <ol><li>Cut the cabbages in half, and then slit each half through the core, but not through the rest of the leaves.</li><li>Soak each piece in cold water and sprinkle some salt (about ½ cup of salt per 1 medium size cabbage), and then set it aside for 2 hours.
    <em>*tip: the stems should get more salt than the leaves</em></li><li>2 hours later, turn the pieces of cabbage over so they get salted evenly. Turn the radishes as well.</li><li>Another 2 hours later, you will see the cabbage look softer than before, and it should have shrunk.
    <em>*the total salting process will take 4 hours</em></li><li>Rinse the salted cabbage and radish with cold water 3 times.</li></ol>

    Kimchi Paste Prep:
    <ol><li>Put ½ cup of sweet rice flour (you can replace with plain flour) and 3 cups of water into a skillet and mix them up. Then cook over medium-high heat, stirring constantly.</li><li>When you see some bubbles, pour 1/4 cup of sugar into the porridge and stir one more minute. Then cool it down.</li><li>Place the cold porridge into a big bowl. Now you will add all your ingredients one by one.</li><li>Add 1 cup of fish sauce, 4~6 cups of hot pepper flakes (depending on your taste), 1 cup of crushed garlic, 1 tbs of minced ginger, 1 medium size minced onion
    <em>*tip: it’s much easier to use a food processor.</em></li><li>Add 7 diagonally-sliced green onions, 2 cups of Asian chives (cut into 2 inches in length), and 2 cups of shredded Korean radish (optional).</li><li>Mix all ingredients well and your Kimchi paste is done.</li></ol>

    Putting it together: (Wear gloves so your hands don't get irritated)
    <ol><li>Spread the kimchi paste onto each leaf of the cabbage, and make a good shape out of the leaves by slightly pressing with both hands.</li><li>Put it into an air- tight sealed plastic container or glass jar.</li></ol><p>That’s all!</p><p>You can eat it fresh right after making or wait until it’s fermented. Put the Kimchi container at room temperature for 1 or 2 days and keep it in the refrigerator.<span style="font-weight:bold;">
    </span></p><p>Cate you know its fermented by one or 2 days after, open the lid of the Kimchi container. You may see some bubbles with lots of liquids, or maybe sour smells. That means it’s already being fermented.</p><p>

    Something to share: Ummm...I absolutely cannot wait until BF is back at work. He hates school, and it's really bringing him down overall. He's just kind of sad and tired all the time. It's like when he was depressed, except this time it's not medical, it's just that he hates school that much. Some days are better than others, and the ones that require homework are the absolute worst. Sorry to be such a Debbie Downer, but it's getting to me (it's been a month - only 1 more left then life will be back to normal). And to make matters worse, the past week and a half I've been really bogged down with homework, so I don't have a lot of time to do fun stuff with him. It's lame.
    I would like to AW some of my (and BF's) latest artwork. But, my camera and computer aren't getting along, so so much for that idea. I painted a flamingo on Saturday (which was my homework break for the weekend), and over the holidays we made an abstract piece from a picture he took. 
    Since I can't do that, I thought you might like to see a picture of my desktop. Any other AoF fans around? I love them, I've seen them 3 times, and they're BF's favourite band, he's seen them 5 or 6 times. Not a huge fan of their newest stuff though...I feel Crisis was the peak of their awesomeness (BF feels it was before that).

    -Sharing: I just bought a car.  Myfirst!  And she got to go for her virgin voyage(with me anways) in the snow on Sunday.  I am pretty stoked about owning a car.  Though I don't have a name...any ideas?

    NikNik- you can come if you don't mind sleeping on an airport floor and building a school ;) It's volunteer work but I'm still THRILLED to be getting away from all this winter.

    Bren - that sounds like fun. I almost went with one of my friends last year to help out in Honduras. Its called Engineers without Borders and they build bridges, a system so that they have clean water, and stuff like that.

    What do I want to share?  I've been really down lately, so my therapist said he may need to refer me to a psychiatrist to go on antidepressants.  I've been trying to force myself out of a depression for the last few days.  So, warm fuzzies and hugs are always welcome on my end.

    Here's my new favorite picture of my ring.  Don't mind my lack of makeup or bitten nails.

    Hai guyz!!!1!

    What's going on in my life is that I'm going to be moving two states away in the summer and starting grad school (sorta).  As such, I have no motivation to do anything in the meantime.

    Picture:  I'm copying Lyn and posting my current favorite dress.  I may even get to try it on this weekend -- my mom is going to be in town and wants to go shopping if we can.

    Shoes, I'm not ashamed to say I've taken antidepressants before.  I look at them as a ladder - when you get in a hole so deep that every attempt to get out only digs you further in, the meds can help to lift you off the bottom so you can start making a good attempt to climb out yourself.

    That said, the best things you can do for yourself are eat healthy, sleep at least 7.5-8 hours per night, and exercise.  None of those things are easy with a law school schedule, especially someone who seems to be as dedicated to their studies as you seem to be.  Whenever I feel myself starting to sink into the dumps, I make sure I'm eating lots of fruits & vegetables with lean meats, schedule sleep into my day and make sure I do it, and make sure I exercise even if I don't want to or don't feel like it.  Give it a shot for a few days, and hopefully it'll give you a bit of an emotional boost!

    FI also has allergies. He had yorkiers when he was little and now has two poodles with no problems. I also second Coco on cairns but I *may* be biased.

    Weeelllllllllllllllllllllll my name is Cupcake.

    I waited to join the party til I could get home to some pics. I recently got a sweet med school scholarship which answered the question of where I'm gonna be next year. So now we're trying to find a job for BF / apartment for the two of us in our new city (any Baltimoreans out there?). We're excited/nervous for this next big step and wondering what to do with the last free summer we'll ever have.

    As for my pic, here's BF, Hurley, and I winning the award for most original costume at the Humane Society's Howl-o-ween Fest. Hurley wore a little piggie cotume, curly tail and all, and we both wore snuggies and hugged him. Who can guess what we were?

    The prize: a THREE LITER bottle of Mad Dogs and Englishmen. GTG anyone??
