Whats up ladies?
I just got back from the gym, and not only have I gotten over my hump of running a mile.. I banged out two miles today. Plus lifting. I am sore and sweaty and fvcking loving it.
Good luck to LDY and Chrissy as they tackle the memphis half and whole marathon (respectively).
Today I will clean up the house and then take Sofia (wittle fiv kitty) to get her vaccines. Then I need to go grocery shopping for the week. So fracking exciting eh?

My realtor is keeping my hopes alive for the house we bid on, so today H and I are filling out mortgage paperwork.
Also, I need to exercise. And grocery shop.
But mostly I just want to be lazy today.

I'm at work. And then I'll go home and sleep and work some more tomorrow. Also quite exciting! And I'm waaaaay too awake considering I only slept about 5 hours last night.

Rosie, I love quinoa, just plain. Make sure to cook it in chicken stock, not water, it will taste much better. I also love a quinoa salad where I just add some chopped veggies (tomatoes, cucumbers, peppers, whatever), toasted nuts, some feta or parmesan, herbs, and then I dress it with olive oil and lemon juice.

If you make it again, try putting the eggplant and zucchini pices in a big bowl and tossing them with a teaspoon or so of salt, and letting them sit for about half an hour. Squeeze them out then pat them dry with a paper towel - you should have a good sized puddle in the bottom of the bowl and much less liquid in the dish after baking.
Rosie, my sister made this: http://health.yahoo.net/articles/weight-loss/photos/diet-tips-food-flips-weight-loss#3 and she swears you can't even taste the butternut squash. She said the turkey meatloaf is also awesome (doesn't help if your H doesn't like ground meat), and the tomato soup is "ok".
Tell your husband he's not strange. My BFF from college can't eat ground meat because of the texture.

I just got a few new cooking toys for myself, so I'm going to try to use them. I have a stovetop smoker, so I want to try to make smoked shrimp. I'm going to try making a healthy grits and a healthy braised collard greens recipe. I'm going real Southern this weekend.
