How many heavy hors d'oeuvres?

My fiance and I want to have heavy hors d'oeuvres, but our ceremony/reception start @ 6pm. The reason we want to do that is so we have a cocktail party vibe. We live far from our families and want to spend the time with them mingling and visiting and not being confined to a formal dinner. We certainly don't want anyone to go hungry. Given 100 guests, how many passed hors d'oeuvres and stations do we need? So far we have about 4 different hors d'oeuvres, shrimp and grits bar, mac and cheese bar, prime rib station and turkey station...Thanks!

  • Talk to your caterer, they will have experience with this.

    As a hungry person guesstimate, I would want at least 2-3 of any app and 4-6 of an app I like.

    What differentiates an average host and a great host is anticipating unexpressed needs and wants of their guests.  Just because the want/need is not expressed, doesn't mean it wouldn't be appreciated. 
  • random thought but my DH has a wedding tonight.  They have 140+ people.  They ordered 1 slider per person and 15 flat breads, plus a few more things.    These people will not be full at the end of the night and they will blame DH for not providing enough food when he is only providing what was ordered.

  • I would let your caterer decide on the amounts and let them know that you want it to constitute a full meal for your guests. It's hard for us to say without knowing if an app is a tiny weiner dog wrapped in puff pastry, or a bruschetta bite or if it's a lamb chop which would be much more filling. I'd also suggest adding a salad/veg option to what you already proposed.
  • Whatever you choose, your reception is at dinnertime, so you need to have enough food to constitute a full meal. Things like your prime rib carving station, sliders, mac and cheese all sound good but you need to make sure people can get at least one full dinner plate of food, and more if you have big eaters there. I'd also add a salad station or some kind of vegetable station, like stir fry or heavy crudités. Be sure you have enough chairs that everyone can sit down and eat at once, too. No standing. People will still move arouond, but it's impossible to eat carved meat from a plate when you're also having to stand and balance your drink, purse, coat, etc.

  • Thanks ladies - We do have seating planned for everyone.  60-inch rounds, so seating won't be a problem.  Based on responses, I've added three more options, increased the quantities and added salad.  Happy New Year!
