B: Asparagus quiche, Monster

L: Salad with turkey, 1/2 avocado, black beans, cheese, salsa & tortilla strips

D: Leftover chicken caesar sandwich, greek pasta salad

E: Workout DVD

Yesterday I complained about getting tired of salad, I pinned some new recipes to try for lunch, most of them are Skinnytaste recipes (which are ALWAYS good).

    B:  1 pc. bacon, 2 scrambled eggs, a few bites leftover roasted potato wedges, salsa, corn tortilla; iced coffee with a splash of whole milk

    L:  leftover roast chicken and veggies (potatoes, onion, carrots, green beans); mango; mini York peppermint patty

    D:  IGE's Lighter Orange Beef and Broccoli (with added red bell pepper and onion); jasmine rice; pineapple

    WO:  Insanity M1 D13 Pure Cardio
  • B: sausage egg and cheese on an english muffin. I'll prob only eat half.
    S: ginger ale
    L: probably a ham and cheese wrap
    S: no idea
    D: no idea

    E: I want to run 3 miles after work but we're supposed to be getting 'locally heavy rains' so I might run to the gym to do it there. DH is out of town tonight, and I have a list of things to get done while he's gone. I want to tire myself out so by the time I get home, I'll fall right to sleep. It's the first night I'll be alone in the house without Toby :(

  • UGH! I ate lots of food this weekend! Now I need to get back to normal eating.

    L: Tuna salad, I need something else with this but I'm not sure what; maybe a small veggie soup?

    D: Something involving buffalo chicken and skinny blue cheese dressing with veggies on the side

    Well the first night we had oysters on the half shell with a bunch of other fresh seafood like clams, shrimp, lobster, etc..

    The second day we had lunch at Magnolias and I had crab cakes and then we had dinner at High Cotton and I was still full from lunch so I had soup and salad but @LaPeanut1018 ate this awesome fried tofu dinner thing.

    Sunday we had lunch at this country club in Kiawa Island and we ate fried risotto balls and fish tacos!!!

    L - Michelina's Lean Gourmet Three Cheese Chicken
    S - Apple sauce cup
    D - Not a clue..I'll update later.

    E - A long walk with FI if its not raining, squats, Arm and back exercise, ab crunches

    L - leftover Mediterranean chicken & couscous salad (sooooo good! Let me know if anyone wants the recipe)

    S - Greek yogurt

    D - sweet & spicy shrimp salad with mango & papaya salsa

    E - hopefully 30 minutes on the elliptical at the rec center over lunch

  • B- nothing- I need to get better at breakfast
    S- wheat thins and 100 calorie Special K bar
    L- meatball sub from subway... Terrible, I know... But I was feeling lightheaded and it was close and cheap ($4.00 special today)
    D- dunno. I'm getting my nails done after work, and I don't know if there will be any leftovers left by the time I get home. I made honey lime sweet potato tacos... They were yummy.... I hope there's some left!!

    I'd love the couscous recipe!! 

    B: Egg white on english muffin with turkey bacon & cheese & coffee
    L: Turkey burger with crumbled gorgonzola 
    D: Spicy sausage pasta (yumm, and not at all healthy :-/)
    E: None.. Seriously, I CANNOT get motivated with this crappy weather.

  • @IrishDreamer & @BreMR - doing it from memory so may be a little off, but it's pretty simple and you should be able to adjust as you see fit:

    • 1/4 cup plain couscous (prepare as instructed on the box)
    • 1 1/5 cups chopped roasted chicken (I just bought one of the pre-baked ones at the store and chopped up a bunch of it)
    • Mix above in large bowl, let cool
    • 1 cup cut english cucumber & 1 cup halved grape tomatoes
    • add to the large bowl
    • 1 cup parsley, 1/4 cup mint, 2 green onions, 1 clove garlic (I did all of these to taste & didn't necessarily use suggested quantities)
    • combine in mini food processor or chop up and add to large bowl
    • In a small bowl, whisk 1/4 cup fresh lemon juice & 2 tbsp olive oil & dash of salt; poor over stuff in large bowl
    I found it was better chilled, and added a sprinkle of feta on top. Delish!
