Sounds like sons gf is a well....brat. idk best advice other than talk to your soon about how you'd like to be with him more , or make plans to take walks, lunches , etc things that don't break the bank. Invite son and gf or if gf doesn't come just son. Start to do all you can to make effort to be with son away from this so he can make sure it's what he wants . You are his mother , you deserve to be held high

I like your plan with the water, the shade, the chairs, and the indoor backup plan. Sounds like a win.
I like the idea of a temperature cut off. I agree 89 is too hot, but I honestly don't think it would hit that by 1:30, if at all. Usually it takes until 3 or 4 for it to get to the highest. Florida is so crazy, we never know what to expect.
My fiancé and I went to a wedding last Memorial Day weekend (same as ours) and it was fine. It was a little hot but it was at 3:30 and they did not have any of the accommodations I have planned for. We were stuck in an open area, head on with the sun. Everyone huddled under nearby trees like cows until the very last minute.
