For the record, I've worked at a lot of places that are open 24/7/365. Not one of them does interviews on the weekends. Just because the place is always open doesn't mean every single employee in every single department is open 24/7/365. I work at a place that is open 24/7/365. i'm the only one who does my job at work. I am not available 24/7/365.
True story. I showed up at the Denver airport at 9 pm for a red-eye, some businesses were already closed. Then when I arrived at Boston at 4:30am, Dunkin donuts wasn't open yet. So even though the both airports were open not every department/business was open.
Bottom line is if you want the job bad enough you will find a way to make the interview, because someone else WILL make the effort.
What differentiates an average host and a great host is anticipating unexpressed needs and wants of their guests. Just because the want/need is not expressed, doesn't mean it wouldn't be appreciated.

I freaking hate that Denver-to-Boston redeye flight. It's the worst. One time it was delayed for 6 hours and FI and I had to take turns sleeping on the airport floor until 3:30 AM just in case it left early. Never again. Never. Again.

We've done DIA-BOS and DIA-JFK once each. The last time was last week. Not a fan, as you said, it's not really long enough for a red-eye. We did it because (1) it worked with my work schedule and (2) it's so much cheaper then flying out of Aspen.
Even with drying to Denver it saved us over $700. Which is more than the 2 tickets on the red-eye.

sarahufl. I will take the redeyes from San Francisco and LA over the redeye from Denver any day. Those are long enough that you have a chance for at least one halfway decent stretch of sleep and you're not landing at 4:30 AM. The Denver redeye . . . not so much.
Saturday interviews would really help businesses. And if you think raising taxes is going to jump start the economy.....good luck with that.
This might be shocking news to you, since you appear to believe you are the center point on which the entire universe is fixed. But businesses do in fact do research into hours of operation which make the most sense for the business. Having a business open costs money.
Most people who wants jobs will move heaven and earth to get to an interview. They'll take time off, line up sitters, take buses, and jump through hoops to get to an interview to get a job. People like you. People who think having to tell your boss you need to take a few hours off or a day off is too much to handle and would rather one business alter their entire business model to suit you, are people they don't really want working for them anyways.

When you're done there, go hang out in a park in case there's a wedding going on there that you can crash.
Businesses have the luxury of deciding when they do and do not conduct interviews. Because it is their business.
