Tasty Tuesday!

Where is everyone??? I rarely start threads, but here goes! Post a recent, or favorite recipe for Tasty Tuesday! It can be anything -  drink, meal, desert. 
Mainly I want to eat my way through the year. Help me with that... haha

In other news, No-Uh took his first steps yesterday...on Star Wars Day!!!! You can only imagine how much my inner nerd was freaking out about that.

    i couldnt find the pineapple & sweet chili sauce so i just used sweet chili sauce and it was still amazing!
  • I recently rediscovered a few marinades that are pretty good-- Caribbean Jerk and Dr. Pepper. Om nom nom.

    Last night I ended up working late, and by the time I got home and made dinner, I was exhausted. FI and I binged on The Office and did a whole lot of nothing. Tonight I'm bound and determined to be more productive-- I need to work out, start laundry, pick up some clutter around the apartment, and make dinner. I will be productive at home! 

    Also, my poor boss had to put down her 19-year-old cat this morning, one week after burying her mother. She seriously can't catch a break. :(

  • @southernpeach89 - that looks delish. unfortunately BF mostly refuses to eat leftovers so i cant make large batches of stuff. what the hell is that about?
  • @jenjen047 I used to not like leftovers either but it totally depends on the food to me. That stinks though. You can still make this though...maybe just in smaller batches and save the extras for you!
  • I love slow cooker meals @southernpeach89!! I'll have to try this. I tried quinoa once and was not a fan.

  • Copied this straight from my recipe book, excuse formatting wonkiness:

    Southwestern
    Bean Soup

     

    32 oz chicken broth

    1 can red kidney beans,
    rinsed and drained

    1 can black beans, rinsed
    and drained

    1 can pinto beans, rinsed
    and drained

    1 can great northern beans,
    rinsed and drained

    1 can rotel

    2½ cups frozen corn

    2 cups chopped carrots

    1 tablespoon onion

    1 4oz can green chilies

    ½ teaspoon chili powder

    1 can diced tomato

    ½ teaspoon seasoned salt

    ¼ teaspoon garlic

     

    Partially cook corn and
    carrots in the microwave. Combine with remaining ingredients and simmer for 90
    minutes.

  • @Beanbot2002 Aw! Well you can definitely take the quinoa out of this and just make it sort of a Mexican style chicken soup? Either way it's very good!

    I just made an experiment yesterday that turned out GREAT! Chicken meatballs, I just used 1lb chicken, a clove of garlic chopped, as scoop of mayo (i didn't have any eggs) some breadcrumbs and some italian seasoning, mix all together, bake until goldeny, and they're done! I am not the greatest cook in the world so I tried to stay basic but a lot of recipes online put tons of stuff in them like peppers, onions (which I hate!!!) and herbs and stuff.

    @all I LOVE leftovers, send me your leftovers!!!

    P.S. in Nobody Cares News: From the moment I woke up this morning I have been a ball of crazy fangirl. Taylor Swift started her tour in Japan last night/this morning and after seeing the pics and video clips of her show I will never be more excited for anything ever again. Ever. Not even my future wedding. Maybe.

    The recipe actually called for root beer, but I couldn't find a single 12 oz bottle (and we don't drink soda very often at home, and when we do, it's never root beer, haha), so I grabbed Dr. Pepper instead!

    Here is a recipe for the best turkey I've ever made!

    Put a 3-5 lb boneless turkey roast (calls for only turkey breast, I use a mixed roast) in the crock pot with 1/2 cup orange juice, 14 oz can whole berry cranberry sauce, and one package of onion soup mix. Cook on low 8-9 hours. Make sure that when you serve it you either pour some of the leftover juice on top, or thicken it and use it as gravy.

    @AuroraRose41 I made that same Irish Soda Bread recipe for St. Patrick's Day! I used caraway seeds though instead of currents or craisins or whatever. So delicious and easy!!! I can't imagine how good it must be with cream cheese spread on it. Now I might make some more just to try lol.

    @labro it is the best recipe I have found for soda bread! And I put plain raisins in it, but I plan to try it with caraway seeds sometime! 

    ETA: How is your vacation planning in Upstate NY going? Did you decide where to go?

    EAT ALL OF IT DUH!!!!

    Salmon patties, chopped cold salmon in your salad (I did this the other day!), grill it, bake it in foil with butter and dill and garlic, eat it on a burger bun. Make a salmon hoagie. Sooooo many choices!

    Something I've always wanted to try is making smoked salmon. Smoked salmon is SO GOOD!



  • @alpacina I will let you know how it turns out.  I usually use cedar planks to grill salmon.  Or I'll wrap the fillets in foil with slices of lemon and bake it.
