Banana bread recipes?

I have some overripe bananas, so I want to make banana bread.  I have made it several times before, but I am still on the hunt for the perfect recipe.  So share your favorite one!

    Hrm hope I can remember this I made it last night

    3-4 mashed bananas
    1 cup sugar
    1 beaten egg
    1/3 cup melted butter
    1 teaspoon of baking soda
    1 1/2 c flour
    1 tsp vanilla
    Walnuts
    Dash of salt
    Dash of cinnamon
    Dash of nutmeg

    cook 350 for an hour

  • I use Paula Deen's.  If I add nuts at all I sub walnuts for the pecans and add a bit of vanilla to the batter.

    Many thanks, ladies!  Hmmm.  I like the idea of using nutmeg, I don't think I've tried that before.  So I think I will give Sparent's a shot today, but I have the others bookmarked to try later! 

    I've never made Paula Deen's, but I think my mom has and I do remember it being pretty good! I like the idea of adding vanilla to it. 

    ETA: a cup of sugar seems like a lot though.  Do you think I could get away with using less?

  • I don't feel like editing twice, ha...but one more question.  Has anyone tried using the Spenda sugar blend in banana bread, or any kind of bread in general I guess?  Does it affect the taste or texture?

    You can go down to about 2/3 of a cup easily or even do 1/2 C sugar + 3/4 C applesauce to substitute.

    Oh man.  Betty Crocker does know her stuff.  I wish I had more bananas so I could try all of these today, for real.

    ETA: I realize that Betty Crocker isn't a real person, so that didn't come out quite right.  But you know what I mean.

    No, but I've used Truvia in a carrot cake and had good results.  It was almost sweeter than normal.
  • Thanks again Anna! Hmmm.  Now I need to decide whether to do the sugar + applesauce, or use the Splenda blend.  This is clearly a very important decision in my life ;)

    Actually, I'm fairly convinced my grandma is, in fact, Betty Crocker. ;)

    (My grandpa worked at General Mills his whole life and when I was little he told me my grandma was Betty Crocker. haha)
  • Oh. I'd recommend baking it in a few smaller plans (I use 4 mini-loaf pans.) They cook a lot more evenly that way.

    This or sometimes I do a mix of splenda and sugar. I *think* they have premixed splenda sugar in  the baking aisle- not sure though.

    </div><div>Hmmm.  That did not come out well for me :(  It didn't rise at all and it is really, really dense.  I double checked the recipe and I don't think I forgot anything.  I wonder if the Splenda blend was the problem?  Maybe I will try it again with regular sugar (and a bit less cinnamon haha) and see it that makes a difference. Or maybe I just didn't mix it together well enough?  IDK. </div>

  • Martha Stewart's banana bread is awesome.  It has some sour cream in it so the bread comes out really moist and dense.  It's awesome and super easy to make.
