    very true.  I have really been working on eating better (less processed food, more natural foods) and your body does adjust... Now if I could just convince my mind of that (some days!)

    You basically make the potatoes chip size (food processor, grater, mandolin, whatevs) spray cooking spray on a microwave safe plate, put the taters on the plate without overlapping them- season, and pop in the micro for a couple minutes on each side. They are really crispy and yummy.

    I slice a sweet potato up and drizzle a little olive oil over the fries and lightly season them with whatever and them bake them for like 40 mins.

    But they're never crispy :(

    AATB, I saw something the other day about getting sweet potato fries crispy, but I think it involved corn starch or something like that.  It kind of negated the healthiness.

    2012, I'm sorry that you're in that situation, but unless someone is putting a feeding tube down your throat and saying YOU CANT HAVE THIS SURGERY, you still have that choice to make.  Life is all about choices.  Sometimes those choices suck balls because you're stuck between a rock and a hard place.  Many people would make the same decision you wuold.  But if you make a choice, you should be at peace with it.  Whining about the situation will not change anything.  It will not make the surgery magically easier, nor will it eliminate your thyroid issue.  Your best bet is to feel at peace with the decision you have made and realize that beauty is a lot more than looks.

    So like, okay, if I slice them and let them sit (not touching each other) on a tea towel on the counter all day, and THEN bake them, that would work better?

    I explained up there probably at the same time as this post. I do have to add though that you can have a whole sandwich bag full of delicious chips for just the calories of 1 potato- which is about 110. Awesome to have alongside my lunch for a snack.

    And don't drizzle the olive oil because it doesn't evenly distribute that way.  Spray it (you can buy Pam-like olive oil or buy a spray can thingy where you use your own oil).  I baked french fries recently, and they were crispy.  I want to try sweet potato fries soon too.

    There was a deal on one of the woot's a couple days ago for a microwave chip maker.  I rarely eat chips, so I didn't bother with it, but I wish I knew Adamar did so that I could have told her about the deal.

    This board is... interesting.  Props to DJ!

    not all day- they would probably get nasty... what I do, is as I peel and slice, I place on a paper towel... You can do yea or nea no the olive oil (but if you use it - they do taste better!!!)
