    First Oreos, now I will not sleep until I have goats milk brie on a honeycrisp apple slice with a drizzle of clover honey.

    And I'm packing the sharpest white cheddar in my hospital bag to go with my sangiovese.

    Blame my Asian genes. Lactose intolerance is extremely common. However, unlike the stereotype, I can hold my liquor like a champ.

  • I've been eating cheese for lunch all week.  But I also tried on my dress this week, and my ass said I need to lay off the cheese for 10 days, so today I was good and had grilled chicken with my cookies and coke.

    I love cheese though; I actually was worried that I had too much on my wedding menu at first.  3 of our 5 apps include cheese: fried mac and cheese bites with buffalo creme dipping sauce, pimento cheese stuffed cucumber cups, and brie pecan tartlets with peach preserves.  The main dinner stations are decidedly less cheesy.

    --> WHY.

    Haha, it's a lot more meaty!  There will still be some cheddar chipotle mashed potatoes and a watermelon feta skewer.  :)

    Joining your lactose free party. Have you tried eating goat cheese? I discovered I can eat it because it has less/no lactose so it doesn't upset me. I now eat all the goat cheese. There's a local goat farm here that makes a rosemary and fig goat cheese that is my life.

    I wasn't excited about cheese until I went to Paris as a teen. I remember eating a sandwich of baguette and camembert and drinking cidre with it. I was 15 and it was the greatest meal ever (well, I had a few of those).

    I love making a take on a caprese salad - sliced tomato, hunks of fresh mozzarella, and a sauce of fresh basil ground up with olive oil and balsamic (and sometimes a bit of parmesan). Essentially a thinned out pesto with a nice balsamic kick. Sometimes the ratio of mozzarella to tomato gets muddled and I end up with chunks of cheese and sauce. Delicious.

    And now I want mac & cheese...

  • I love all things cheese. It was one of the main reasons I was happy I got a job in WI out of grad school :-)

    My friends all know my obsession with baked mac and cheese. They share a similar obsession. We are holding our first annual mac-and-cheese-off in a couple weeks. Each of us will bring our favorite homemade mac and cheese. Then there will be a blind tasting. And we will vote on the best. Also, it's an excuse to eat 5-6 different mac and cheeses all at once. Awesome.

    We served a smoked gouda mac and cheese as part of our cocktail hour. It was set up on small plates with a gourmet slider. Yum. During a pause in the family pictures (when DH was taking some alone with his family) one of the waitstaff brought me a whole tray of them. I ate all the mac and cheese and left the sliders for DH. Sadly, I dropped the fork she had brought me after the first couple bites. So I ate the rest with my fingers. I have no shame.

    Lately my favorite cheesy thing to do has been to make baked polenta with a variety of cheeses in it (I also roast up a bunch of veggies to pair with it). I've used fontina and parmesan for a more classic italian flavor, smoked gouda, sharp cheddar, asiago, and multiple combinations of them all. Every combo tastes delicious.

    Also, I always buy blocks of cheese, never the pre-shredded stuff. This is a new thing since I got out of grad school and have real people money again. It makes me so happy to be able to shred all of my own cheese nice and fresh. Plus I get to try all kinds of different cheeses that don't come pre-shredded.

    Ok, I'm going to the fridge now to get a snack. Of cheese. Yum.

    I make THIS for parties and it's always a huge hit.  I add a little cinnamon and vanilla to the apple too, so it's extra delicious.

    Mmmm cheese. Cheese makes everything better. I'd probably actually be skinny without cheese, but that would only be a half life. 

    I think overall brie is my favorite. I'll have to try this baked brie thing.

    I freaking love cheese, but especially Manchego! Even better, manchego with fig jam.

    Also, barely buzzed! Its a cheddar rubbed with espresso and lavender. The first time FI and I had it was in Jerome, AZ and I was afraid I'd never find it again, but its actually surprisingly not too difficult to find.

    Our "crisper" drawer may or may not be full of cheese...

    Me either. Vom city if I eat the lactose. Goat cheese is ok though. Maybe a little gassy, but TOTALLY worth it :)

  • I would talk about cheese with you all night...but this thread has me hungry. So instead I'm gonna go eat so fancy cheese. I think I have fresh mozzarella, Maytag blue and habenero something on hand :-9

    the way I make it is so simple- just unroll a tube of Pillsbury crescent roll dough and drop a wheel of brie on there, cover the brie with jam of some sort (I use apricot, but you can use pretty much anything) and fold the dough over it to basically seal it up. Then bake it according to the directions on the crescent roll package- till it is brown. So delicious. I serve it with thinly sliced apples.

    My favorite cheese by itself is goats milk Brie or smoked Gouda. I can and will eat half a block of cheese by itself. There a reason FI ha cheese at our proposal!

    A far as recipes I loved baked Mac and cheese. I usually start with a bag of three cheese blend, but add whatever other cheese I have so its often 8 cheese bacon macaroni. Thanks to ohannabelle bell it's now had extra cheese, more bacon, and caramelized onion on top.

    I was also super happy to find cheese curd in one of our little hippy grocery stores. Now I can make poutine!

    But my favorite cheese of all time is and always will be fried cheese. I cut 1/2 inch slices of queso fresco, dip in cornstarch, then deep fry. The outside is crunchy an yummy while the inside is nice and melty.

    Yes! FI and I just took a cheese making class nearby. We learned to make mozzarella.  But the best part was not to make the balls. Just pour olive oil, salt, and pepper, on the warm curd. I had never heard of that and it was amazing.

    Have you seen the goat milk brie at TJ's?? It is AMAZING.

    Which is a goal I'm ashamed to admit I've never considered until now.

    For those of you who can't eat cheese/diary, have any of you tried that Heidy Ho non-dairy, vegan, organic "cheese" that was on Shark Tank a while back? Any reviews? 

    ....Oh, and since yogurts have been mentioned, Maple Skyr will send you to heaven and back.

    @afox007 If you ever go to Greece- get saganaki. OMG. I don't even know how to explain it but it's a block of cheese that they basically set on fire then blow out so the outside has this crisp crust layer and the inside is gooey, kinda like a giant mozzarella stick.     I saw the episode myself. I can eat dairy but was curious. Can't find it near me though.
