Dinner ideas

I am at a loss of what to do for dinner tonight. It's my last night in town for awhile! All I know is that I'm hungry and I want something tasty. What are you all doing for dinner?

    I'm thinking bacon wrapped asparagus. BC bacon. And wine, definitely wine.

    Last night I had pan seared brussel sprouts, shallots and of course BACON! Perhaps wine then too.

    I need to eat the bacon before it goes bad...it could happen ;)

  • Hmm tonight I think I'm gonna make a naan pizza with spicy chicken sausage, just need to check on the cheese situation when I get home.  I use the premade frozen naan from Trader Joe's.

    Last night was a grilled pork chop with a mango habanero glaze, brown rice, and sautéed green beans.  Night before was a creamy roasted red pepper penne with chicken.

    Cooking for one is fun :)

    I'm doing BBQ pork chops on the grill, mashed potatoes, and steamed broccoli. I'm starving! I always try to have a big meal on Wednesdays to get over the hump of the week.

  • I took out sweet and hot Italian sausage and planned on making pasta, but I just emailed DH to see if he wanted to go out to eat.  He's had a crazy week and I'm just being lazy LOL.

    Hmm tonight I think I'm gonna make a naan pizza with spicy chicken sausage, just need to check on the cheese situation when I get home.  I use the premade frozen naan from Trader Joe's.

    Last night was a grilled pork chop with a mango habanero glaze, brown rice, and sautéed green beans.  Night before was a creamy roasted red pepper penne with chicken.

    Cooking for one is fun :)

    I would like to hear more about this...did you make or buy it? Wa sit as amazing as it sounds?

  • Well, I just scarfed down some Doritos, so that helped. LOL

     

    Oddly enough, pizza sounds perfect! It's not fancy, but it sure is satisfying!!!

    @Photokitty I had my bacon fix this morning. I eat it every morning for breakfast. I started doing it to cut carbs out of my diet, but even when I gave that up, I still kept eating bacon!

  • We are making pesto-marinated shrimp, grilled asparagus, and rice. Last night we had butter-garlic spaghetti squash with grilled chicken and broccoli. I'm tired of making the same boring foods so I'm trying new dinners all week!

  • Grilled chicken and grilled corn on the cob. Yuum. Earlier this week we did grilled white fish and rice pilaf, and yesterday was obviously taco Tuesday. Tomorrow is sausages and beans, and Friday we usually go out (read: I get a big steak and a big glass o red wine).

  • I am making thai curry with pork and sweet potatoes over jasmin rice. H has been hounding me to make it for weeks now. He keeps texting me asking what time I get off lol!

    I had that exact meal on Monday.


    I'm grilling a beef tenderloin on the grill.   I'm going to have potatoes.  I'm thinking of just slicing them up thin , coating them with some olive oil and cooking them on the grill (using a veggie pan).   I might just do mashed.   Not sure yet.      Then I will add some sort of veggie.

  • H is making pizza from scratch.  He found a good recipe online for no-rise pizza dough that you cook in a cast iron skillet.  So he is doing that tonight.  He is topping it with BBQ sauce, the Kahlua pork I made in the crock pot and pineapple bits!  I can't wait to get home!

    I admit I bought it.  They had it on clearance at the grocery store, it's normal price was like $8 and I got it for $1.79.  I wasn't sure when I tasted it from the bottle and it seemed a bit cloying but it was super good on the chop.  They had it by all the BBQ sauces and stuff.  It was this brand: https://www.jelly.com/

  • H went home at lunch time and threw some ribs in the slow cooker, with BBQ sauce that he makes from scratch. I can't wait to eat those tonight! We'll probably have tater tots and a salad with them because I'm feeling super lazy and he'll be a soccer game.

    I miss the Jersey Silver Queen corn. I'm heading to NJ this weekend and I'm going to scarf down as much food as I can (cheese steaks, for starters)

    Is a jersey tomato a particular variety or just one grown in New Jersey? I feel like an idiot asking. I've never had one either way I suppose.

    I still have left over chicken adobada. I've had tacos or burritos for two days so I'm throwing it on then grill and having it on a salad. I just need to find a dressing I can make. Also I wish I had fresh corn, I'm craving grilled corn like a mother.

    The silver queen corn is amazing.


    Jersey tomatoes are just beefsteak tomatoes grown in NJ.   I think it has to do with the soil, but they are bigger and juicer then tomatoes I've had any where else in the world.

  • H went home at lunch time and threw some ribs in the slow cooker, with BBQ sauce that he makes from scratch. I can't wait to eat those tonight! We'll probably have tater tots and a salad with them because I'm feeling super lazy and he'll be a soccer game. 
    Slow cookers are the best! On Monday I went home at lunch and threw a pork roast, half an onion, and a bottle of BBQ sauce in the slow cooker for 4 hours. Easiest way to make pulled pork.

    I bought all the makings for falafel and Greek salad yesterday, I'm hoping FI will take the hint and get cookin' (it's his Saturday today, though I usually end up making dinner even on his weekends...)
