Okay - Jambalaya straight from NOLA. Obviously you can substitute any meats for some good veggies or even leave them out if you wanted to. You could probably also sub the beef broth for veggie broth.
Ingredients: 1 can French Onion soup 1 can Beef Broth 1/2 cup Shallots (green onions) 1 small can Tomato Sauce 1 stick melted Margarine I small box Uncle Ben's Converted Rice (16 oz)* 1 1/2 teaspoons Tony Chachere 1 teaspoon minced Garlic 1 teaspoon Pepper 1 teaspoon Parsley
1 teaspoon Thyme
1 lb Chicken**
1 lb Sausage**
*This is what the recipe uses. However, any rice that you have on hand will be fine. I used Jasmine rice for mine. **You can also use shrimp, ham, or whatever you have in place of these meats.
Directions: Preheat oven to 350F Combine ingredients in a baking dish and stir Cover and put in oven for 45 minutes Take out and stir Put back into oven for another 45 minutes
Be sure not to uncover during cooking except for the ONE time you are stirring.
Rsana - I freaking love it. The recipe makes a lot of jambalaya. And quite honestly I could have eaten it all on my own. I happily ate it for both lunch and dinner for two days straight.
I have so much food in the house. I found a recipe for easy fried rice that would give me leftovers for a day or two. It called for 3 cups of cooked rice. I wasn't thinking, so when I made the rice I put in 3 cups of uncooked rice. Which makes like 9 cups of cooked rice. I have so much rice.
I've never had jambalya, but when I went to New Orleans last year it was the one thing I really wanted to try, but ended up not being able to. So I'm super excited to try it.

Hello! I'm being lazy today. I just finalized plans to go visit my grandpa on Saturday, which I'm really looking forward to. He and I are very close, and I haven't seen him in a while, so I'm excited to get to spend some time with him.

I bailed on going out with H tonight to a tap takeover at a pub about 40 mins away. I think he is bummed we aren't going, but after sitting in the waiting room at my mom's appointment all day today I just can't do it.
